    Ingredients :
    Base
    Biscuits 80 g.
    Melted unsalted butter 40 g.
    Fillet
    Cream cheese 200 g.
    Sugar 50 g.
    Yogurt 40 g.
    Lemon zest 1 tbsp.
    Lemon juice 1 tbsp.
    Gelatin powder 5 g. + water 30 ml.
    Whipping cream 120 g.
    Topping jelly
    Lemon (Yellow) 💛
    Lemon juice 100 ml.
    Sugar 50 g.
    Lemon zest 1 tbsp.
    Gelatin powder 5 g. + water 30 ml.
    Butterfly pea flower (Purple) 💜
    Water 120 ml.
    Butterfly pea flower 10 ea.
    Sugar 20 g.
    Gelatin powder 5 g. + water 30 ml.
    Lemon juice 10 ml.

    How to :
    1. Biscuit Base: Crush the biscuits into crumbs (a ziplock bag can help!). Mix them with melted butter and press the mixture firmly into the base of your mini cheesecake molds. Chill the crust in the refrigerator.
    2. Lemon Bliss: Zest and juice your lemon.
    3. Soften Up: In a separate bowl, sprinkle gelatin powder over some water and let it rest for 10 minutes to soften.
    4. Fillet Smooth: Beat the cream cheese until smooth, then gradually add sugar, yogurt, lemon zest, lemon juice and liquid gelatin (From 3). Ensure everything is well combined.
    5. Whipped Cream Dream: Whip your cream until stiff peaks form. Gently fold it into the cheesecake filling until just combined.
    6. Pour & Chill: Fill your chilled molds with the cheesecake mixture and refrigerate for 1 hour.
    7. Toppings Jelly!
    💛 Yellow Topping: Soften gelatin in water. In a saucepan, melt sugar with lemon juice over low heat. Stir in lemon zest and the dissolved gelatin. Pour this mixture into a separate container and let it set.
    💜 Purple Topping: Soften gelatin in water. Boil water and steep butterfly pea flowers for vibrant blue water. Strain out the flowers and add sugar and dissolved gelatin. Stir in some lemon juice to change the color to purple. Set this mixture aside to set.
    8. Double the Fun: Once both toppings are set, carefully pour them onto your mini cheesecakes in separate layers. Refrigerate for another 2 hours to allow everything to set completely.
    9. Dessert Delight! Garnish your mini cheesecakes with a sprinkle of butterfly pea flowers and a lemon slice for an extra touch of beauty. Then, enjoy the delightful combination of creamy lemon and vibrant colors in every bite!
