OnlyCans - I Cooked a 3 Course Meal Using ONLY Tin Canned Food

- Can (pun intended!) you really cook a delicious 3-course meal using just tin canned food? I gave it a go! Watch as I create a starter, main & dessert from some pretty simple staples - all in a tin can. It’s fun, creative, and surprisingly tasty with a little magic disappearing food along the way ;)
Ingredients:
Chicken & Bacon Chowder
1 can potatoes, diced, reserved the water
1 400g can cream of chicken soup
1 small tin sweetcorn, drained
1 tin of Bacon spam, cut into small cubes
Salt & Pepper to season
Spaghetti Meatballs
1 tin meatballs in tomato sauce
1 tin chopped tomatoes in herbs
1 small tin sliced mushrooms, drained
1 tin mixed vegetables, drained
2 tins spaghetti in tomato sauce, drained sauce reserved
Tropical Pavlova
1 tin chickpeas, water drained and reserved
120g caster sugar
1 tin pineapple slices
1 tin apricot
1 tin coconut milk, drained
1 tin caramel

It would be cool to see a follow up exploring: How cheap you CAN go, How fancy you CAN go, and more experiments of what canned chickpea water CAN do.
Spaghetti hoops on toast is my comfort meal too! If you don't already put a bit of paprika, garlic and pepper into the spaghetti - it just levels it up a few notches.
The reason the first batch of chickpea meriunge dissapeared is because pinapple dissolves protein, and it's the protein in the chickpea liquid that makes it able to be whipped up like eggwhites in the first place. Really fascinating reaction tbh, I think adding any other fruit juice wouldve worked better XD
The fact that he chose the one thing likely to have that effect is wild. It might have been a baking fail, technically, but totally worth it for the science moment!
I thought only fresh pineapple had the enzyme that dissolved protein. Isn't tinned pineapple safe?
@@badcatbad Canning does destroy the bromelain, but the extra liquid seems to be the culprit. Quick google shows that even adding liquid food coloring can possibly throw off aquafaba meringue.
@@lordofthenotes now that you mention it, I think this does happen with real egg whites as well - flashing back to the first time I attempted to make macarons, and I had to add so much gel food colouring to get it to be visible that the added liquid turned my peaks into soup. I think I'd repressed that memory XD

Spam, tinned potatoes, chicken soup, Fray Bentos meatballs and tin after tin of chopped tomatoes was exactly what I was getting in the disabled persons Government food package during Covid. Wish you'd done this back then, lol!
That's brilliant that you got food parcels. I remember we had one because my kids get free school meals. They did include recipes which was quite good.
I just had to be as creative as I could, but sure helped me get by (18 months of shielding wasn't exactly a joy). Thank goodness the cupboard is always well stocked with herbs & spices! 😂
@@timboxall8936 yeh it was a strange time. We shielded as my partner was pregnant luckily I got furloughed for most of the year. I was good fun though like you say experimenting with different things. All good fun thank god it's over now. Also I hope you're not too concerned about governments reform on disability I know I am being disabled my self wish you best of luck were gunna need it.

Ours weren't that great. Would have loved tinned potatoes as the fresh ones they sent weren't fresh, they looked like the stuff they would normally dump. Mold, green, shooting, mushy or looked like they been thrown off a building several times. I was grateful even though it might not sound like it.

A tip/trick I learned a while back with tinned mushrooms. Once you strain them off, sautee them for a bit with some salt. It will expel the excess water out of them, so when you add them to a sauce, they will pick up the flavor of the sauce. I personally don't mind the taste if I don't do that, but if someone you're cooking for doesn't like mushrooms because of the tinned flavor, this trick will change their mind.
Or you know... buy mushrooms that don't come in a can.
Sure for the video idea it's great, but you can get jars that last just as long, frozen has a shelflife of 20+ years and you can also just... buy mushrooms... like... the stuff on the ground they cut and tin/can/freeze.
If someone doesn't like mushrooms because of the tin flavor, they dislike the tin, not the shroom.

Nooooo. Even as a midwesterner, canned spaghetti is totally disgusting. I can't even eat regular spaghetti because of how gross and soggy it was when I was a kid.

Pineapple juice has an enzyme in it that breaks down protein molecules. That’s why it’s used to tenderise steaks etc.
Canned pineapple, however, does not.

@@angelika_munkastrap4634 Broken down protein can still be used by your body (it breaks it down itself, when you eat them), but it is not the best to use when making dessert were the protein is responsible for the consistency, like gelatine, for example.
Top tip to help with the chickpea meringue. To help stabilize the aquafaba (chickpea water) try using cream of tartar when whisking as it will help hold the peaks when cooking
it will still disappear without the sugar
Cream of tarter is just acid.

Drain the potatoes well then fry them in a pan with chopped leeks bacon and spicy chillies.....lovely.
That reminds me a bit of my student days, I always had all sorts of canned food in stock, when something was on offer and I had some money I always bought several cans at once. Sometimes the month lasted longer than the contents of my wallet, so sometimes a tin of lentil soup ended up in the pot at peak summer and I sometimes got really creative hehe
Hallo en Goededag! As someone in their own student days, I definitely feel this. Frugality is a core of the Dutch, and for those who left for America we aren’t far behind
I find the tinned potatoes handy for making slow-cooked stews, chopped up and tossed into the mix with seared meat, seasonings and tomato stuff and left to become awesome in the slow cooker, very low-effort stuff... :D
I use diced frozen potatoes, with some ground beef, beans, lentils, onions, peppers. Add in some time and you’re left with a wonderful taco filling
Another wee hack you should try....use a "cup a soup" as a pasta sauce. Just use half the amount of water, then mix with plain pasta 👍 or use the correct amount of water, pour onto the pasta, sprinkle with cheese & do a pasta bake in the oven 👍
I keep a pack of tomato flavour in the cupboard for this. If i run out of tinned toms I just use that and add my regular herbs and spices for bolognese or whatever.
Yup, it was last year I found out if you mix half of cream of mushroom and half of evaporated milk. It become a good cream pasta sauce. Just saute with onion, add the combined sauce I just mention, season it and add your pasta of choice your good to go
My cousin taught me a great soup recipe. 1 can each black beans, refried beans, diced tomatoes with chilies & canned corn. Just add a little cumin & maybe onion flakes. I lived on it all last winter!
Don’t you Americans know how to use fresh onion? That would be so much better if you browned your onions, then added your ingredients slowly.
I use a bacon grill, which is a lot cheaper than Spam. The best way to cook it is thinly and most definitely dry fry it.

The first attempt at the meringue made me literally laugh out loud. Like belly laugh. The second attempt made me want to use my chickpea water to make meringues for the rest of my life. Thank you for proving it can be done!
Since I’ve never even bought a can of chick peas I don’t understand what happened with the first batch! 😂 Can you please explain why they disappeared?
@@Starbuck2005 most likely a mix of adding extra liquid (which is sweet but also acidic), and not adding sugar. Sugar (as in sucrose, I mean) has a stabilising effect on protein foams (which is basically what both whipped chickpea water and whipped egg whites are - a whipped mixture of water and proteins). So without the real sugar added, the chickpea foam was way too unstable and simply deteriorated in the heat. The second go around he added in sugar, which stabilised the foam (creating a meringue when baked) but also made it taste nice!

Introducing Bromelain - the protein digesting enzyme found in pineapple!
You're correct, but only sort of! The processing involved in canning pineapple actually breaks down bromelain (which is mostly found in the core of pineapples, anyways, which are removed in canned pineapple). So the amount of bromelain in canned pineapple juice is minimal, if at all present. The real culprit is probably adding more liquid, combined with not adding sugar. Chickpea water has the same essential composition as egg whites (water and protein), but the stability of the foam is much lower than the foam made by egg whites. So adding sugar to stabilise the foam is even more important when using aquafaba!

But by making it, you've taken a step in NORMALIZING the fact that some people HAVE to make food in different ways.
I haven't had the energy to ACTUALLY COOK for 6 years.
In the spring I rebroke my ankle and opposing hip and couldn't use my microwave.
I got a hot pot and using zero physical energy options (cans and dehydrated veg etc) I started making soup.
Obviously I was still hooped for the warmest parts of summer, but I've been back at it for a number of weeks now and it's SO NICE to be able to cook from scratch again, even though I have to cheat to do it....
And it's only soup
This is ever so clever; really, what a great idea. If the power is off but the gas stove is working, these are delicious meal ideas.

I use tinned potatoes all the time. Fry them or put them straight into the air fryer with some Italian herbs and smoked paprika 👍

I googled this about the aquafaba meringue - Your vegan meringue might collapse, weep or melt if your aquafaba was either not thick enough, under whipped, over whipped, not stabilized properly with a stabilising agent, or if the sugar was added too quickly

You can make a decent chilli type dish mostly from tins, the only addition apart from spice I have is some chopped bacon and an onion.
Fry chopped bacon, add chopped onions, add a can of corned beef and cook for a few mins as the corned beef will break down, add a little tomato paste (tin or tube) and cook out slightly, then add canned tomatoes, chilli powder and finally kidney beans (no salt needed as bacon and corned beef have enough). I would serve with rice though so suppose that's not tinned 🤣
I pretty much used to eat like this as a student 😂 My favourite was adding a tin of mackerel to a tin of mulligatawny and serving with a packet of savoury rice.
I think I would have put the crispy spam on top, to keep the crispiness to it.
no bake refrigerator cheese cake. 237mL Cream cheese, 75mL Lemon juice, 414mL sweetened condensed milk, 5mL vanilla extract. whisk with stand mixer or hand mixer tell smooth. Pour cream cheese mixture into prepared pie crust. Refrigerate for 3 hours or until firm.

Nice job, Barry! These looked really good (especially the chowder). I wonder, if you could have boosted the flavour of the spaghetti sauce if you would have tried and sautéed the mushrooms and vegetables before adding the rest of the ingredients to simmer? You could have used the oil from the spam to not use another ingredient from the pantry, even. Maye try it next time?
Stagg tinned firecracker chilli is a top tier meal. I had it in hot dogs rhe other day also from a tin. It was mega.
Boston area person here - you could do a CORN chowder. We do it just like a clam chobut with corn and no seafood. Corn is a mix of whole kernel sweet from tins and creamed corn tinned. Serve with bacon.
I'd love to see a full budget version, like a completely cheap version. Or do a cheap vs steep canned edition.
I always have canned tomatoes, canned chickpeas, redbeans, butterbeans etc.
quick chilli? can of tomatoes, can of red beans, asda chilli spice sachet, fry up a fresh onion and red pepper, add your favourite mince (I often use the dry soya mince with marmite stock) - it's a meal in minutes.
Tin food can be nice, and fairly cheap. I would not live on it indefinitely, but at a push certainly. Had some lovely meals with tins. Nice video.

I'm currently in the process provisioning our off-grid cabin, generally only stay for a few days, so bring in fresh food, but always bring in a few cans each trip so there is a stash for emergencies. No store for 100km. That chowder looks like it's coming with.
Well this video is a "Can do" video 😂😂 and I think maybe u could add this to the student recipe playlist... Just a thought as they looked quite gourmet especially the chowder one and I suppose could put pastry on the top and chowder pie and I think meatballs spag bol needed some grated cheese on the top but overall definitely a canned success and maybe do some more as I definitely think this is such a great idea for quick easy cheaper recipes that can (haha) for anyone tbh and loved watching it too
Canned spaghetti is beyond bringing it back to life it's mush cooking it longer I would think i make it designate
I thought I was going to die laughing when it he boiled it to bring it back to life -- it's already so mushy, and boiling it makes that worse. He just made it deader!
Wonder if he had added baking soda whether that would have helped since it does make non-Asian noodles chewier.

You can most definitely find tinned clams. They come whole in a range of sizes, or chopped. They’re great for making chowder, obviously, but also spaghetti clams, and my personal favorite calm dip which can be made as a hot or cold preparation.
TRully in awe on te variety of canned foods in other countries. In ARgentina we have some tomatos, some fish, peas, , corn, and not much more
Barry, to stabilize aqua faba, you can use cream of tartar. I would've added evap milk to the chowder, and left the veg out of the Bolognese. I love this episode--you're a food mad scientist!

A range of new uses for tinned veg and making meals. I am not sure about the spegetti meat balls. i think I will stick to dry pasta.

Hi Barry, This is great fun. I would have bought a tin of butter and fried the rinsed spaghetti in a bit of the butter to give it a cruncy texture and then put the sauce on it. Like a Putanesca. You omitted some tinned anchovies. Cooking tinned food a bit helps the flavor (as does adding at least half more fresh stuff but that was outside the scope of your challenge)
This was great fun. I enjoy merengues but since I'm on a low carb regimen I still enjoy my eggs and cream.... All the best to you and the girls (including the Mrs of course) Jacques Mexico.

A boiled can of condensed milk is dolce de leche, which if you translate it, it literally means sweet milk, so it makes sense.
Tinned potatoes and shelf stable mayonnaise make a nice potato salad. Great for travelling by car and "cooking" at a motel or campsite. Or drained tinned potatoes & tuna & peas with vinagrette for easy Nicoise Salad

The Spam with Bacon almost certainly added the bulk of that cost, it's over £3 a tin at most supermarkets! Assuming he was shopping in Sainsburys he could have bought a rump steak for less per £/KG.
Fun Fact: The Italian term for soft noodles is AL BENTE, like al dente, but with a B.
It’s not noodles. It’s spaghetti, which is a type of pasta. Noodles are a different cuisine. Americans make this mistake all the time.

@mrbarrylewis chickpea water works as vegan meringues as protein leaks from the chickpea to the water. Pineapples contain a protease enzyme which breaks down protein (which is why it can be used to tenderise meat).

Barry, you need to get your wife and kids to remove the labels from an assortment of tins, do a sorted food style can challenge where you have no idea what is in the tins, and you have to come up with a meal using what is in the tins. Could be an interesting video for us, maybe not for you, though.

The residual pineapple juice in the syrup likely denatured the protein in the aquafaba, causing the liquid mess.
This was the hottest cold open I've seen in a while.
I've been guilty of making a lunch that is just a tin of cooked meatballs and some buttered toast. Multiple times. But it was still kinda nice.

Pineapple breaks down protein. Usually the canned stuff doesn’t do it because the enzyme is cooked out. However I don’t know the precise process used for all canning so it may not have been completely cooked out.
I don't think I would try the chickpea whiped. Some of the other stuff looks alright. Recently I have been more on a kick about making chicken seasoned with rosemary, garlic, onions, salt/pepper, and cooking it in butter and finish in the oven so it's cooked through. It tastes fantastic lately.
A million subs would make a nice Christmas gift for Barry.
Spam is delicious sliced thin and fried well. No need to use any more salt in dish. You can soak it to get some salt out of it as well.

You can also use Aquafaba as a substitute for egg whites in a Whiskey Sour.
I’d have browned off and sautéed the veg and the meatballs first, before adding the tomatoes and the tomato sauce!

I don't like eating over cooked Spaghetti but it might taste better with fresh cooked Spaghetti than tinned. Good effort though

Quite incredible. A lot of tin food, is actually quite decent. I love tin potatoes. Eaten them cold many times. You done extremely well. Flipping love it.
You can also use the chickpea liquid to make Mayonnaise.

yeah, aquafaba is a common substitution for egg whites in quite a few things. I think Sorted did a show of utilizing it for a mixture of applications which were pretty surprising. One of them being mayonnaise!
