There are several delicious veggie dishes on Scandinavian Christmas tables, like the Finnish root vegetable casseroles and the Danish cabbage dishes. Very good, can easily be made before time, and add more veggies to the table :-D I personally would like a green salad with apples or pears, to give some crispy acidity to balance all the buttery creamy fattiness of the traditional delicacies. 😀
