My favorite kitchen equipment and camera gear:
    www.amazon.com/shop/thecookin...
    makes 10 pitas
    Ingredients:
    3½ cups (490g) all-purpose flour
    1½ tbsp active-dry yeast
    1+1/3 cups (320ml) warm water
    2 tbsp olive oil
    1 tbsp sugar
    1 tsp salt
    Directions:
    1. In a small bowl mix yeast, sugar and 1/3 cup of warm water. Let sit 5-10 minutes.
    2. In a large mixing bowl mix flour with salt. Add olive oil, yeast mixture and water. Mix until a dough is formed. Knead the dough about 6-7 minutes. until the dough is smooth and elastic. If the dough to sticky add more flour, if the dough to dry add a little bit of water.
    3. Place the dough in an oiled bowl, cover with towel or plastic wrap and let it rise until doubled in size. About 1 hour.
    4. Turn dough onto a lightly floured surface, gently push the air out and divide into 10 equal pieces about 3oz (85g) each piece. Roll each piece into a smooth ball, cover and let rest 30 minutes.
    5. preheat oven to 450F (230C) with the baking tray inside.
    6. With a rolling pin, roll each ball into about 6-inch (15cm) circle. Set aside on a lightly floured countertop. cover with a towel and let pitas rest about 10-15 minutes.
    7. Bake the pitas for 4-5 minutes. remove from the oven and cover immediately with towel. Keep in closed bag.

OMG!!! Finally after trying 4 other recipes that all failed in creating the pocket, I came across yours. TOTALLY AWESOME!!! IT WORKED!!! I am so excited. thank you soooooo much for sharing this video, not only did it actually work but it was easy and has a gr8 taste!!! again THANK YOU VERY MUCH!!! Terry

I still don't quite get it, does the pocket somehow just magically form when you bake it? even though it was simply rolled into a ball before and rolled flat? In that case, why won't a flattened pizza dough form a pocket too?

The dough balls dryen under the kitchen cloth because the cloth didn't retain the water. It is visible at 2:35, it made a crust. To prevent it, you should put your dough balls in a hermetic container, like under a big bowl, to keep them in a moist environment. Don't put flour while resting.

I am going to give this a go. I am doing it first time...I have no problem with the video. I can back up or pause it..because its the 21st century and I have a computer. I have an oven and I have hands. And if for some reason ..my yeast failed ...or I didn't knead it enough...or I mixed the yeast too hot or cold...I am certain..yes certain...that they will still taste delicious. Certainly fresh from the oven is a far cry better than the store shelf. In the instance that they don't rise or provide a pocket..then they get turned in to seasoned crackers to enjoy with a wine platter. Grateful for everything in front of me at this time. Thank you for your efforts in passing this along. It is a great bread to enter into baking life.

    1. Is it possible to put quick yeast in the granules and if so how much?
    2. Is it possible to bake in a pan instead of in the oven?
I do not need such a quantity, we are a small family
    3. Is it possible to freeze the pitas after they have cooled?
Thank you very much for the recipe without talking much - short and to the point and everything is clear!

I used a large cast iron pan to do mine. Different TH-cam recipe though. I did the pan method because that channel said that it was a good alternate. I used the cast iron pan because it was Summer in Arizona and I did not feel like heating up the whole kitchen. Utilities are expensive in the Summer in Arizona! It helps to use some type of heavy lid though, doing the pan method.

pita is a general term for flat bread
in arab countries we have various types
this type is called kmaj, it is thicker and chewy, can be frozen to one week but needs to be rethawed
we have a new type of bread too called "mechanical" bread
this is basically like the same pita bread kmaj but thiner, freezers for a month, just pop one in the micro oven and you're good to go

Medha Dhakal old yeast or water too cold or too hot. Water must be at least 110°F-119°F beyond that the heat will kill the yeast. Also a trick I learned from a baker is add the sugar mix it til it dissolved than add the yeast wait til it bubbles than add the salt. It work perfectly every time.
