    The poaching strategy is interesting. We make about 3 dozen eggs Benedict for an annual get together and it is always 'slowed down' by the poaching. They sure did look perfect!

    Two easy ways to clarify butter:
    1) melt the butter and refrigerate for an hour, then scrape the solidified fats off the top;
    2) strain melted butter through a coffee filter which is formed into a cone into a coffee cup. The butter drains into the cup, and the solids are filtered out.

    Fun fact:
    The ratio of butter to egg for hollendaise varies wildly between recipes, even on this website.
    • On the most conservative side, Andrew Rea of Binging with Babish used 1 stick of butter for 4 eggs, so 0.25 or 1/4
    • Moving up, Joshua Weissman used 1.5 sticks of butter for 4 eggs, so 0.375.
    • Molly here uses 2.25 sticks of butter for 3 eggs, so 0.75 or 3/4 of a stick of butter per egg
    • J. Kenji Lopez-Alt takes the most extreme path with 1 stick of butter per egg
    Personally, I think the sweet spot is half a stick/quarter cup of butter per egg.
    No one asked, but my personal recipe is two egg yolks, two teaspoons of dijon, two teaspoons of lemon juice, two teaspoons of water, and a quarter teaspoon of cayenne pepper.
    Edit: oh yeah, and about an 8th if a teaspoon of salt obviously.
    It's really kinda hard to screw up hollendaise imho

    I am so relieved I dont have to whisk the hollandaise anymore this is so much easier and also makes making the sauce and eggs benny at home a lot more accessible imo . sometimes bon appetite does a great job demystifying some dishes n provding alternate n more accessible techniques n i am SO HERE FOR IT !!!!

    If you add white vinegar to your poaching water it will help the egg whites coagulate around the egg yolk helping it from over cooking and not looking like a hockey puck. Also always season your poaching water with some salt. It just makes sense.

    This is an impressive preparation. I've always had so much trouble scaling this dish. Even for two people this feels like 5 times harder than making it for one in my experience

    If you have an old fashion electric stove with coils, then you don't need a double boiler to cook hollandaise or chocolate. The settings on these stove stop electric ranges can produce heat much lower than can be found on a gas oven. All you really need is a good heavy bottom sauce pan and the lowest heat setting and you're good to go.

    It's funny in Canada we don't call it Canadian bacon, it's called 'back bacon' as it comes from the loin. It can also be called pea meal bacon if it rolled in cornmeal that was once ground yellow peas as a preservative. It is cured not smoked so it's more ham like and nearly trimmed of most fat.

    It’s so hilarious to me that Molly uses so many abbreviations in her speech but instead of just saying “jeez Louise” she pulls out a “jeez Louisiana.”

    You can put the hollandaise in a foam canister in warm water to keep it set and make it easily dispensable.

    Molly, I'm old school on hollandaise which cooks the yolks, your's is really considered a mayo. Nice shortcut though. If u cook yolks using Dbl boiler method & incorporate ur method, perfect hollandaise!

      Hollandaise is a mayonnaise, just hot rather than cold but it’s still a liaison sauce of eggs and fat, whichEVER way you make it.

      I think she left out that the blender she used spins so fast it heats the ingredients. So it should be called Eggs Benedict for a crowd if you own a Vitamix.

    I love how half the comments here hate brad/love molly, and vice versa. I mean, it did seem rude not to taste her eggs benedict, but then again there is a nice way to tell someone to quiet down, and being passive aggressive isn’t it.

      Update, blending 1 stick of butter and 3 egg yolks and a good squeeze of 1/2 lemon works great for 2

    my Hollandaise recipe is, 8 yolks, 1 lbs butter (clarified) with a 1/4 tsp cream of tartar as a stabilizer. the cream of tartar will allow the sauce to hold for hours in a warmer.

    I cant be the only one wishing for a tension filled battle series in which both Brad and Molly try to outdo eachother by cooking "gently" or fermenting everything. In the epic season they finally profess their love for eachother and they live happily ever after!

      Hollandaise is typically whisked vigorously over steam as the butter is added, it cooks slightly, but you don't want it to scramble. Mayonnaise uses raw eggs too, it's a lot better than it sounds if you've never had eggs Benedict

    Tried this and it was an epic fail because if your blender isn’t narrow towards the bottom, the yolks won’t blend right and the sauce will be ruined, we had a large blender and didn’t realize it, but also putting all the eggs together in a bowl before poaching broke the egg whites or something so even though we gently poured them into the simmering water it would turn into white egg soup. This seems easy but I think there’s more skill and knowledge involved here.
