Chai Boey/ Mustard Green Soup (3 S Soup- Spicy, Sour, Savoury)

  • The post CNY dish that has evolve into daily dish instead- Chai Boey, which means leftovers in Hokkien, is the one dish that I think all Malaysians would approve because it has those big 3 S's- Spicy, Sour and Savoury, now make it 4 S's instead, SEDAP! Haha. You can cook this on stove as well but the cooking time is double from cooking using a pressure cooker and you know cooking on stop can be quite a mess sometimes with those oil splashing around.
    Here's the ingredient list:
    [Yield: 3 or 4 pax]
    -Some roasted meat like duck, chicken and pork (our Muslim friends can skip the non-halal meat); I have seen people used KFC too!
    -Mustard greens/Chinese Mustard vegetables (about 600g)
    -Dried chillies (5, add more if you prefer spicier)
    -6-8 garlic cloves
    -3 shallots
    -5 dried tamarind pieces (assam keping), go with 10-12 pieces if you don't have tamarind paste
    -Tomatoes (3 small ones or 1 big one)
    -Mushrooms (optional, however much you want to put)
    -Soy sauce (4 tablespoon or more)
    -A few dashes of white pepper
    -Salt to taste
    -Sugar (2 tablespoon)
    -Tamarind paste (1 tablespoon)

    Hello Ms Jean.. I am a helper here in Singapore and let me take this chance to thank you for this wonderful dish.. I have been cooking this regularly and my employer's family enjoying it.. I follow the ingredients and procedure exactly just except for using fried pork belly instead, and less spicy... Thank you and Godbless

    Add on these items won't go wrong. Roast Pork, Roast Chicken vs Chicken ginger oyster mushroom sauce (buy in economy rice restaurant & put lots of free gravy. Can Sardins (big) with all gravy, Can Black Beans Fish, Can Braised Pork Belly (China) with all gravy, 5 nos chicken feet (cut half). Seasoning: Oyster Sauce, Sugar, Light Soy Sauce, Abalone Sauce, Tadmarine Paste, 1 Tbsp Fried Garlic. When you start saute the ingredients, start with chilli boh and lots of oil. You want the red oil, then add in everything. Cook every thing in the black wok, to taste and then transfer to the pot to braise till soft. Pressure Cooker at least 1 hour or more till vegetables is soft and final taste. You want to add some corn starch so that gravy not so watery.

    I make best. My version (canned black beans fish, sardines, roasted meat, dry mushroom, few tomato, etc etc you mentioned). I stir fried in wok before cook in pressure cooker. Seasoning (oyster sauce, tamarind, sugar, light soy sauce, chilli paste adabi traditional, dried chilli). No need white pepper, dry chilli & chilli paste hot enough. 500g not enough. A batch of vegetables around 2 to 3 kg vegetables

      Hi @jeanbeanstudio hope you are well. I’m planning to make this tomorrow Sunday 5th but I do not have asam keping. Just tamarind paste. Should I add more tamarind paste ? I also bought the pickled mustard leaves from the Asian grocery store I can add that as well? Please let me know ❤
