If you cook your steak without butter or oil you'll get a better seer on the steak, then add butter at the end to avoid the butter burning. Will keep both a better aesthetic and flavour profile. Also; if you keep your heat high without oil, the steak will cook a lot quicker, keeping the meat a lot more tender than long cooking periods. 2-3 minutes on either side will get you the same medium rare without all the seasonings and butter burning.
