I have tried many recipes trying to find a frosting recipe that everyone enjoys(and I can still use for decorating )... i personally love all frostings. However my friends and family always complained that it was too sweet (it's suppose to be sweet!!!! Anyways...) I kept looking for a buttercream recipe that wasn't as sweet. And thanks to you I found it! Granted its still sweet.(as it should be ) but my friends and family said it was much better. Thanks!
Learn how to make Wilton Buttercream Icing. It's the traditional choice for flavor and versatility and it is softer and more spreadable than most icings. Perfect for icing cakes, piping borders, writing, flowers, etc. Buttercream can also be prepared with all shortening, resulting in a pure white icing! #buttercream #buttercreamicing #cakedecorating
for the buttercream package I did everything according to the package and when I put the Wilton red color, the icing became very thin we put powdered sugar to try to thicken it up and it didn't woek
I've been looking for a less sweet butter cream and here I found it! I tried a lot of butter cream recipes and most of it was so super sweet and my family doesn't like sweet much. Here I found a good recipe, not too sweet and super fluffy. Thank you so much!!
I made this and it turned out really good and pipes great to, i also put a few pinches of salt into it to takeaway some of the sweetness. I also added the coco powder and made the chocolate one and that was also very nice. It sets quite firm once refridgerated.
I have used this recipe many times and it always turns out great. However, with the change in Crisco shortening, the shortening leaves a bit of a slick coating on the tongue and palette. Lately, I have had better success with 1 stick butter and 1 stick Imperial margarine. Also, instead of milk, typically I use dry coffee creamer mixed with water. Perfection!
Coffee creamer? Wow. Now that's thinking outside the box. Have always been leery of milk idea especially when letting the cake sit on the counter. Thanks so much!
Try this recipe next time!! Don't use Crisco - 1 cup high fat ratio shortening (NOT veg. shortening) 1 cup butter 2 tbsp meringue powder 2 tsp clear vanilla extract 8 cups sifted confectioner's sugar 9 tbsp milk (regular or 2% work great)
For a harder frosting do this recipe! 2 cups high fat ratio shortening not Crisco 2 tbsp meringue powder 2 tsp clear vanilla extract 8 cups sifted confectioner's sugar 10 tbsp milk (regular or 2% work great)
As a Wilton fan of many years, I would like to pass on the tip to use water instead of milk to thin buttercream icing because milk can make your colors off if you tint your icing.
+Leonie Harding - If you are looking for a pure white buttercream just omit butter; substitute an additional 1/2 cup shortening for butter and add 1/2 teaspoon No-Color Butter Flavor.
Mermaid Pearl - Confectioner’s sugar is made from cane sugar that has been ground into a fine powder and mixed with a small amount of cornstarch or tapioca starch. When making things like icings you will want to use confectioners’ sugar.
Wilton Could you explain the reasoning for the vegetable shortening? I've never seen vegetable shortening used before in a frosting recipe. Just like using vegetable oil in cupcakes, I don't understand it. Every cupcake I've ever made didn't require the use of vegetable oil and they stayed moist even in the open air for at least a week.
Vegetable shortening is good to incorporate into the icing when the cake or cupcakes will be served in a warmer humid climate or out door location. I've seen buttercream melt right off of a cake when made with all butter. Also, incorporating vegetable shortening gives a whiter color. I'm not a fan of all shortening, but a lot of bakeries do use primarily shortening.
In regards to the cupcake, give it a try and I doubt you'll ever go back! They end up staying so moist and fluffy for so much longer when you use vegetable oil rather than a traditional recipe. TheScranLine has the best recipes I've come across so far.
Hi I took the Wilton cake decorating coarse. The way they showed us how yo make buttercream icing was with all vegetable shorting, and we also used meringue powder. So does your way change the flavor?, and if this is the Wilton way then why were we told different?
If it had merengue powder it must have been royal icing. This is a different kind of icing. Buttercream is a soft and creamy frosting that doesn't harden like royal.
hi maam ,,,i love your way teaching how to make butter cream ,,,very clear and easy to get ,,,,,,,hmmmp especialy your voice very nice like singing angel ,,,same as your lovely face maam ,,,great job god bless you
Thank you very much! Concise and very clear. Are the recipes written somewhere? I had a time trying to keeping up, as you listed the ingredient. I am going to try this on a carrot cake I spotted somewhere.
hey I have a request: for future videos it would also be appealing to have the measurements in grams and/or litres for people who aren't from the US :D it's very annoying to always have to calculate and it wouldn't be much work to just add the grams in brackets when listing the ingredients
sharen ng from my experimenting I would say no for this recipe because than the powder but ratio would be of and it wouldn't turn it right, if you don't like how sweet this buttercream is may I suggest a cream cheese frosting as it's more tart or a meringue buttercream
Could I substitute more butter for the shortening? I just personally just don't like shortening in frosting, but other than that, I love this recipe! It's so easy to get the right consistency!
FYI everyone; if you cannot get the icing [aka confectionary] sugar you can make your own be putting granulated sugar in a blender--the higher quality blender will make a finer powder.
in my opinion, veg shortening is bad for health reasons. Google why hydrogenated oils are bad for us . :) I don't use it for that reason. I personally don't like the texture of it either in frosting as I taste it. I always stick to butter and I've never been sorry.
Hello, thank you for such a helpful and nice video on perfect buttercream. Just wanted to ask you- as you said it can be made using hand mixer but then what about the paddles? Hand mixer only gives whisks, no paddles. Can we get same soft silky buttercream using a hand mixer? And any issues regarding speed of hand mixer? Thanks a lot.
Hi. thank you so much for this easy to follow video. if I don't have a paddle attachment, can I use the dough attachment of my mixer instead? Thank you again.
Hi Wilton.. loved that recipe.. thanks for so many videos.. want to know one thing can i replace sweetened non dairy whipping cream in place of veg shortening and less sugar.. and if yes then when should i add whipping cream along with butter or after adding sugar to butter and will i get stiff peaks then too for designing. Please do reply.. i will be waiting thank you..
Okay, so I didn’t have shorting so I decided to use some margerine butter for it and I used everything else and it turned out beautiful. I’m only 13 too!! Thanks for the help!!
I prefer to use all butter, and usually use heavy cream rather than milk to adjust final consistency. It tastes great, but will this variation stand up in decorating.
Hi, I wanted to know that if I use all butter, no shortening, does it have to be refrigerated? Also if I add milk does it have to be refrigerated. I take it the only difference is that it doesn't crust? And naturally the taste. Thank you
Can I use this recipe for fondant cake? I hope butter cream will not fall down if it used in fondant cake? Question is: can I use buttercream made with vegetable shortening for fondant cake? Thanks!
my buttercream always starts to melt within 5 minutes after i decorate whatever. Is this because i am not using vegetable shortening? It is never strong enough to stay firm in any of my decorations. Can you asist me please? Thank you very much! Btw, I always buy everything you have in tools and all that, i just love all of them. Thank you for everything!
does it matter if the vanilla extract is clear or not? n also does it make much of a difference if i use the whisk attachment instead of the paddle? thank u.
Hello, great question. You can substitute with heavy whipping cream or half-and-half. We recommend adding whatever liquid you choose slowly, one tablespoon at a time until you get to your desired frosting consistency.
@@wilton Thank you for responding. I wasn't for sure if you would respond on this website so I did contact you on Facebook messenger, thank you again..

Wilton can you use regular vanilla extract in substitute of the clear vanilla
Yes , it wouldn't make that much of a color difference. I use regular
+Mitchell Gil Of course you can! They only use the clear for the colour, but really, the colour is fine if you use normal - I never use clear!
Mitchell Gil yes but clear vanilla makes it much paler

Why would you use the paddle attachment over the whisk

because sometime the icing can get to thick and it wouldn't be good for the wisk
