Humans do small gestures due to the emotions and opinions they feel on a person or the environmental stress they have gained. You want to make as humanly realistic as possible?, make it feel limited like a human, AI gets stressed, tired, angry, anxious etc. Give AI a history of their life, to referenced their actions and programs when interacting with a person. Humans mostly acts on based on emotions, influence, small percentage of logic and money, depending on the person.
