    I asked my Chicago husband if he knew what giardianiera is and whether he puts it on beef. He scoffed - DO YOU PUT SALSA ON CHIPS??! Apparently, I didn’t know about this sacred part of his life

    When your daughter grabs a carrot "to go" ...made me smile so broad. Worth every hour spent in the garden to raise children who appreciate and enjoy fresh produce. I grew up this way - eating whole tomatoes like they were apples while pulling weeds. These days I only have a potted garden but I enjoy summer produce from the farmer's market and my garden frequently. It's fantastic.

    I never thought of doing this with those annoying little yield crops. Thank you so much. I just dislike earwigs so much that I went to uhaul and bought a box of newsprint packing paper, made tubes with the folded paper, dampened them very lightly and laid them around my harden. The earwigs love to go in the rolls and overnight I can capture them and dispose of them in the morning. I guess I'm a fanatic about them...maybe. LOL

    P.s. yes Italian beef in a bucket! Beef brisket in crock pot no need to prebrown. A jar of giardinaria drained, a jar of pepperoncini peppers with all the liquid in jar. An envelope of good seasons Italian dry dressing. Cook all day .then shred and serve on a hard roll with drippings etc.

    My Italian family has eaten this forever, but I've never thought of making it. I may try it with red wine vinegar. My aunt loved it and always bought it from the store. We have lost so much information for saving and making traditional foods, thanks for reminding me of this.

    Hi Shay, so good to see you harvesting. We are at day 58 with no rain and temps 102 to 106 here in Texas. This is a very difficult drought and we lost most of our garden. We are praying for rain and looking forward to our fall/winter garden. Here in Texas we can harvest all the way up to late December. It's so nice to see your kids in the garden with you. We raised our daughter and now grandkids in the garden. This is the same thing we do when we get to the end of the season. Mike is a retired chef and he does pickling and fermenting.     Giardiniera and lupini beans are quintessential Chicago snacks. My husbands best friend asks me to make them every summer. The purple cauliflower really is quite beautiful in there isn’t it. Your little helper is so adorable.

    Great video! I especially love your JuJu helping. I have a jar of Giardiniera in my fridge. I am new in the past couple of years to fermentation. It is wonderful. The old ways are coming back...They almost died out....I'm sad my nono passed before I could learn all the old ways... Glad you put what you do up on media it is a blessing. thanks!

    Awesome! This sounds like a quick pickle melody. We do this with beans specifically, but to mix up a bunch of veggies and pour the brine over is a great idea.

    My grandma used to make a "summer pickle" which also used up leftover bits from the end of the garden season. It included some green tomatoes and was not super crunchy. But it was so good! I made it myself a few years ago and shared with friends, who loved it.

    I LOVE pickled Giardiniera until I tasted fermented Giardiniera. Which has a depth of flavor and a medicinal value that is tremendous.

    I had never heard of giardiniera before but it is similar to how I make coleslaw, pouring a hot vinegar mix over shredded cabbage. I have also done the same to small jars of sliced red onion which I love to add to salad sandwiches. No one in our family likes raw onion, but the hot vinegar brine slightly cooks the cabbage and onion and takes the sharpness out of the onion while maintaining the taste and a good texture. I will definitely be trying a jar of mixed veges when I harvest my garden.

    I live in a suburb of Chicago and we use giardiniera on beef sanwiches and cook pot roasts in the crock pot with an entire jar of it. My family uses it on hot dogs and hamburgers too.

    Ms. Elliot. Lovely videos as always. Thanks for sharing. - I usually make my Giardiniera with a careful blend of cauliflower, carrots, bell peppers, celery, and chile peppers, from my garden - marinated gently in olive oil. Don't forget that any tomato sauce tastes better with just a little sugar added.

    Love this! Sorry if I missed this but did you say where it should store? Do I keep it in the fridge or on the countertop or what? How long will it last for? And no need to worry about an inch of headspace?

      These are fridge pickles, so they store in the fridge (for months). You could also water bath can if you want to store it at room temp (for years)

    In Finland we dry a lot of our meat. It’s not as common anymore (especially in the southern parts) but it has been very common!
    The meat is dried outside at spring and it’s hanged with a twines!

    Great way to clean your garden veggies! Outside in a bucket of water! Love your Berkies! That would we better than rubber clogs that keep turning my toenails black from the rubber.

    I say utilized 7x out of 10..
    Its th feel of it that seemz wholesome to Me, in comparison th th vibe of something being used.
    I also have shifted My keiki & I toward "Have, Give & Recieve" over 'take/want/need.
    A place of abundance rather than lack.
    "Will You like to have some?" For instance, instead "Do You want some?"
    And replacing 'take' in certain moments w thingz like 'give turnz, have turnz.. get a picture.. have az long az You must (over, take Your time) etc etc...
    I find th empowerment of alignment with word to be a new key factor to liberated Beingz on Earth - recognizing the Free Will of All with simple shifts like "will You...for Me?" Instead of "Do You wana... for Me?"
    (Of course I remind to ask 'will' instead of 'can' becauze asking of will aknowledgez that it iz a Personz choice to or not to do anything - hence setting OnezSelf up to be prepared for a 'No.')
    The 5 yr old iz keen to it.
    Some dayz, all it requirez iz a simple reminder to go from "I'm HUNGRY!" ((with an emotionally attached expectation of soneOne Else to jump up & feed Them)) - I draw a question mark in the air & He corrects HimSelf - "Will You get Me something to eat?"
    Its the little thingz

    'In the beginning waz the Word, & the word waz God... ... & He spoke (it) into Being'...

    From Chicago and had no idea that Giardiniera was not popular else where. Smaller chopped Giardiniera is what you typically find on sandwiches. The bigger kind in the video is more of a salad or snack.

      Allow to cool completely before you refrigerate. That gives it time to slightly tenderize the vegetables, mild cooking and pickling.
      She mentioned water bath canning as well, if you'd like it shelf stable.
