Makhni Sauce Recipe "Master Gravy" by Head Chef | at Saffron Circle | Indian Restaurant in London

  • You guys asked for it, so here it is. Makhni Sauce Master Gravy, a recipe very often requested by viewers, but seldom revealed by chefs, but in this video Head Chef Phool Prasad kindly shows us his full recipe making process for making Makhni Sauce Master Gravy.
    MAKHNI SAUCE (MASTER GRAVY) RECIPE INGREDIENTS:
    Boiled & peeled Tomatoes
    Fresh Green Chillies
    Fresh Green Coriander
    Fresh Ginger
    Fresh Garlic
    Vegetable Oil
    Deggi Mirch (Mild Chilli Powder)
    Cinnamon Sticks
    Dry Bay Leaves
    Cloves
    Green Cardamom
    Mace
    Black Cardamom
    Salt
    Sugar
    As the mixture stars boiling in the pan, it will increase in volume, so be sure to use a large enough cooking pot to prevent it from spilling out.
    Please note that the above gravy is a tomato based gravy (which by itself is quite tangy) in the restaurant it's used alongside an Onion Masala (made using Onion & Tomato, Ginger & Garlic, homemade Garam Masala).
    After making the Makhni Sauce (which is vegan), Chef Phool Prasad shares his recipe for making Chana Masala using the freshly prepared Makhni Sauce.
    CHANA MASALA RECIPE INGREDIENTS:
    Oil
    Carom Seeds
    Garlic
    Boiled Chickpeas
    Makhni Sauce
    Onion Masala (Onion & Tomato, Ginger & Garlic, Homemade Garam Masala)
    Salt
    Mild Chilli Powder (Deggi Mirch)
    Chana Masala
    Green Coriander
    Ginger (cut into Thin Sticks)
    When you visit an Indian restaurant, have you ever wondered how the fully cooked dishes arrive so quickly on your table?       You're quite right, Green Street is "Indian food heaven" compared to Brick Lane; I've only ever eaten in 2 restaurants in Brick Lane & both those places put me off the Indian restaurants in Brick Lane the food is not authentic tasting.
      Appreciate you're suggestion, I've eaten many times at Indian Veg in Chapel Market, I've asked Safa (the owner) several times if I can record a video there but sadly he's always refused, (I'll ask him again when I next go there).

    I'd love to know what other dishes this goes into, is it a substitute for the tomato puree you recon?

      It can be used in most curry dishes which are gravy based, the main thing about this gravy (& other restaurant gravies) is that the cooking of the tomatoes has already been done (which takes up most of the time in cooking). Use this gravy in combination with an onion gravy.

    Tips for peeling a Ginger skin just use a head of a Spoon and scrape it sideways. It will be more faster than a peeler or knife. Thank me later.

      It's made without butter because it's to cater for any vegan orders.
      In this restaurant the chef adds butter when preparing any non vegan dishes.

    For a few years now, I have been making and using a similar sauce called "Onion Tomato Bhuna Masala." The ingredients that Head Chef Phool Prasad uses in his recipe are almost identical to the Bhuna Masala. The chef uses more aromatic and flavorful spices in his recipe than the Bhuna Masala calls for. The Bhuna Masala that I use is a Punjabi style and with slight adjustments it could be used in both North and South Indian cooking.

    Does anyone know more about Bhuna Masala? I am very interested in hearing your comments.

      Bhuna masala consist of only roasted spices(majorly consisting of roasted cumin(Jeera) and carom seeds(Ajwain) blended with small quantities of other spices
      But chef here used all the spices which constitutes Garam masala ( typically have more aromatic spices )

    Did you know?
    When britishers were in "Bharat", they used aluminium utensils for food preparation and serving in "jail" to prisoners
    Why?
    Coz aluminium is not healthy metal compared to other metals for human body (even today after several inventions in science field like handalium metal).
    So?
    Well, britishers didn't want those influential "Bharat" leaders and supporters, agitators to live long life and be a "problem" for british raj in "Bharat"
    hence the use of aluminium.. Sad that, still people in "Bharat" use aluminium for food preparation and serving.

    I wish great restaurants didn’t cater to vegans. They’re just out of their heads, those vegans. There’s zero nutrition in vegan food, which is why it’s a starvation fast.

    The cooking method used here is of a mediocre style as per Indian standard, typical of a roadside dhaba. The more elevated method of this recipe is to heat the oil, fry the spices...then onion and then tomato. Then, fry, boil the mixture....rest and cool it.... then blend it to a fine paste.

    Chef to chef, why did he blast chill the sauce, then blend and then only to reheat again? 🙄
    Smacking the blender on the side of the pot really gets on my nerves! Nobody would dare to that in my kitchen! £500 a piece to replace!

    26 years as a professional chef, that’s a rough makhani sauce, but the worst part is the guys working methods, so messy all of which could be avoided with some TLC, he even covered his lovely chef jacket in tinned tomatoes 🙈 sorry, I wouldn’t hire him.
