    위생모 안 쓰고 시원하게 일하는 게 보기 좋습니다.
    짚 잡던 집게로 고기도 굽는 것 같은데 이런 털털함 매력 있죠.

    여긴 소고기 돼지고기할거없이 다 존맛... 돼지고기는 저렇게 껍데기 떼어주는거 시중에서 먹는 돼지껍데기랑 역시나 맛 차원이 다르고 음식이며 뭐며 다 하나하나 맛있음 ㅠㅠㅠ 또 가고싶어

    가봤는대 손님이 계속 들어오더라구요.
    근데 주문한 우대갈비는 나오는 시간이 많이 걸렸구,직원들에게 필요한걸 요청했는데 바쁘신지 자꾸 까먹구 ..근데 고기랑 된찌가 맛있었어요. 담엔 안바쁠 시간에 가보려구요.

      1970년대 이전에 벌써 짚불 장어구이를 했거든요.

      @@minds-peace 짚불구이원조는 무안입니다 서울에유명한몽탄이라는 고깃집도 무안군몽탄면의 지명을그대로 따온거구요 몽탄면에가면 논두렁밭두렁 한복판에 시골집 마당한켠 짚쌓아놓고 연기로 고기구워주는 짚불구이집들 많아요
      기본이 3대째 70년이상된집들이예요

    무엇보다 직원이 구워주는게 맘에드네요 보통 돼지갈비 같은거 먹으러가면 고기랑 밑반찬 툭 던져놓고가고 손님이 고기타나안타나 계속 뒤집어가면서 먹으면 이게 고기가 코로가는지입으로가는지 먹는데 집중못하게됨

      진짜 그렇죠 어느정도 자리 잡은 평범한 식당도 힘든데 맛집이면 평범한 식당보다 배는 더 해야 가능한데 요식업이 대상이 음식과 서비스일 뿐인지 매일 노가다하는 수준이라 엄청 빡세죠

    엄청 간단해보이는 요리도 장사로 손님한테 돈받고 팔려고 하면 여간 힘든게 아니죠
    진짜 비법 다 알려줘도 못따라한다는게 실감이 갑니다
