Chili crisp is so yummy! I use it to make a kind Kim Chi with it, add it to diced potatoes and onions with eggs for breakfast. Mix it w sour cream, garlic and refried beans for a dip w corn chips!

This is awesome! I was recently given a chili crisp recipe book as a birthday gift as it’s a condiment I really like, so I’m glad to see that Eric also had the idea to use it for things like sausages!

I'm now in the process of converting a room in my shop just for sausage and charcuterie projects. High temp cheese is used because is has a higher temperature melting point. It keeps the cheese from melting and draining out of the sausage when it is cooked.

I think I'd go with the 10% as well, just to give it a little more of a spice kick. I was wondering the whole time how you drained/removed the oil from the chili crisp, glad you mentioned it at the end there. Booked marked this one for a future batch!
I love all things spicy. I've grown habanero/serrano/jalapeno/cayenne/tabasco peppers for the last 20 years or so. When my boys were younger, going on campouts with our church, I would drink straight from a bottle of Tabasco Sauce and freak the boys out. I had a friend who worked for Tabasco and every year he would bring me a case of the latest and greatest version of Tabasco Sauce. I definitely am trying to make this sausage.

I been using the 5lb stuffer for quite some time now and love it but it definitely would make life easier when doing larger batches.
