    Eric your videos have helped my sausage making tremendously! It’s great to have a creator that responds to comments and helps people out. At this time I have a LEM half horse grinder and a LEM 5 lb stuffer which after making a couple batches of sausage I learned it is to small.

      I have a smaller grinder but use a 10lb Hakka stuffer with dual gearing and it works great. Having a smaller grinder doesn’t matter as much but a large stuffer helps a great deal. Although the 10lb stuffer really only holds about 8.5lbs.

    Missed this one as I was off shore fishing in the gulf yesterday and yes I did catch a bunch of fish.
    As far as my stuffer goes mine is am102 year old( my grandparents bought it in 1921) enterprise 4 qt manual stuffer. The wife hates when I make sausage as I have her turn the crank.
    One little trick I do when doubled or triple grinding is to make the little ball and refreeze them before the next grind.

    I used my KitchenAid briefly until I realized the limitations to put it mildly. I got a 5 lb stuffer because it was in my budget and it made a tremendous difference. I'm so thankful for Eric and the channel as I started my sausage making journey with season 1 of Celebrate Sausage and haven't missed a single video. Thanks for all of the videos Eric 😇👍

      That's what I started with a few weeks ago! You were being polite when you mentioned that the KitchenAid has 'limitations'. I tried making Jalapeno cheddar smokies only to find that the cheese was getting stuck in the feed tube and very little was getting into casing.
      Flash forward to today and I have an 11lb stuffer with a meat grinder on the way. Talk about escalating quickly!

    I have used the Kitchen Aid attachment before with limited success. Now I pre mix all my sausages and pay my local butcher to use his machine at the end of the day. I do a lot of venison and it’s the last sausage stuff of the day before the machines get sanitized!!

    Snack Sticks are my favorite thing to make. Unfortunately I'm still using my old Kitchener nylon gear 5lb stuffer, so I would absolutely be in heaven with an electric stuffer! I've upgraded everything else, my grinder, my meat mixer, etc... but my stuffer is the one thing I'm still using from the old days. I've been making snack sticks since about 2005 so I have it down to a science. ECA is the way to go for the twang, and a good binder makes a difference also (although I usually use B&P #414 binder). I like to take a commercial snack stick seasoning mix as a base and modify it. Been working for me that way for way more than 10 years. I even went so far as to make my own PID controlled electric snack stick smoker.

    Just in time!!! I have two deer in the freezer and was looking for something new to do with venison besides cheddar brats. I currently stuff my sausages with a 5lb LEM sausage stuffer after years of doing it off a small grinder that has also been replaced. I only make sausage a few times a year but when I do, it's 20-30 lbs at a time with all the venison trim I've put aside from deer season.

    I currently use a 5 pound manual stuffer. Best upgrade I ever made from the Kitchenaid stuffer. However, winning the electric stuffer from The Sausage Maker would be a game changer for me.

    I use a Kitchen-Aid to grind my meat, after the grinder has been in the freezer for a few hours.
    But I use a 10lb manual stuffer for my sausages. It's not bad, but an electric model would be awesome!
    For smoking, I use an inexpensive electric smoker. It's not digital, but I like it.

    I have a small 5 pound stuffer and it is very time consuming to continue to fill it when you do large batches. Those who can't afford do what needs to be done.
    A 25 lb stuffer would make a huge difference for me.

    We have tried making snack stick's in the past without much success. I believe we can deliver a better product following your instruction. One aspect of our sausage making process that has become more challenging is our stuffer. After an injury to my neck in 2020 I am partially paralyzed in my right arm. This makes it extremely difficult to use the 15lb manual stuffer. When it comes to the sack sticks, I can't exert enough pressure to operate the manual crank. An electric, foot operated stuffer would be an excellent tool.

    Like many folks here I started out the wife's kitchenaid mixer and shortly made the move to a 5 lb stuffer that works quite well for small batches but it can prove to be a bit of a handicap with larger batches or when making summer sausages .

    My 5 lb stuffer was a big step up from stuffing with a grinder, but the larger electric would be the bomb. Snack sticks look great.

    My current sausage stuffer is just an attachment to the kitchenaid mixer. It really is such a pain to use when making sausage. It’s slow, and it creates a massive vacuum in the little feeder tube, so pushing the meat through is hard. Love these videos though, always keep getting new ideas when celebrate sausage comes out! Just gotta upgrade the equipment so I can keep making what I love

    Great series, I have many of these sausages marked to try. I use a 1 HP grinder, I started using a kitchenaid attachment but the step up to a "real" grinder was one of the best things I did.

    Your channel is probably my favorite on TH-cam! I love the detail that you go into on every recipe! I've been using my uncle's antique Wagner Stuffer #2. It's works but is extremely heavy and cumbersome. It would be great to not have to break my back just getting the thing set up! Thanks for the great content!

    I make a snack stick variety.
    100% venison may at about 20-30% pork backfat. Make about 60lbs a year and everyone loves it.

Another great one! just ordered a kitchen aid grinder but thinking about returning it and going with a dedicated meat grinder was thinking about a grinder from "meat your maker" but i think you channel has me leaning closer and closer to the #12 from the sausage maker.     First let me thank you, I started watching you a couple of years ago. Unfortunately, I was out of the country at the time. At this time, I purchase a dedicated stuffer. Prior I have always used my grinder to stuff sausages. Although good I could never get anything other than large summer sausage to turn out. Now that I am back at home I am looking forward to trying out your advice and tips.

    I’ve always been of fan of sausage and snack meats and since I came across you channel and the way you explain everything, I’ve been extremely enthusiastic of trying to make my own sausages and snack meats. I’ve never owned a sausage maker or a meat grinder other than my parents old hand crank grinder😂. Great instructional video❤

    Love the series. Using a cabelas grinder and a homemade sausage stuffer I found on marketpace sold by an elderly couple downsizing. The chamber is stainless from an old frozen custard machine. Still getting used to it but for $25 it is a big step up from using the grinder to stuff. Already made a few recipes from tge channel. Thanks!

    When I first started making sausage, I used my grinder and absolutely hated it. I found an inexpensive stuffer at Academy that I use now. It is a 5 lb manual stuffer, but I rarely make more than that so it's been fine. I would like to upgrade to an electric one. Snack sticks are something I've been wanting to try. This recipe will be the first one I make, because my daughter loves pepperoni. Thanks for helping us out!

    Thank you for the recipe Eric. I currently use a manual stuffer and it takes every muscle in my body to get the forcemeat through the smallest horn. The electric stuffer from the sausagemaker sounds sweet!

    Been working to up my game on sausage and no doubt, these snack sticks are on my list. Still using the very basic equipment, Kitchen aid for grinding and a small 6-pound horizonal stuffer. Fingers crossed, by this time next year, I will be cranking out tons a sausage and snack stick with all new equipment. Thanks for all the content, love the videos.

    Hi, thank you for the clear way you teach sausage making it is great to watch. We live in Britain and sausage is pretty bland and you have to pay very high prices for specialty Italian sausage. I haven’t been able to buy Pepperoni for years. Bearing in mind that I don’t have access to the same spices and machinery, I have a Kitchen Aid, can you give me a recipe for pepperoni sausage please?     Im a backyard bbq person who likes to cook and improvise with new flavors. Two of my favorite things you definitely don’t find in Florida are hungarian salami and kabanossi sticks, so watching season 2 made me realize i gotta do something, after been almost done with season 4, I already own a #22 MEAT! grinder, a 15lb stuffer (manual) and a 7qt mixer. I’ve done more than a few of your sausages and man!!! I I have enjoyed every single one of them. Now im just working on those flavors im looking for. I appreciate what you do. And by the way, supplies from the Sausage Maker, meat from my local butcher shop and the best pork from Porter Road make me very pleased

    I have been making snack sticks for a few years now, I started out using my grinder to stuff them with an attachment made for doing snack sticks. I bought a budget 7 pound stuffer and it works so much better and faster. I haven't tried making the pepperoni ones yet but it is on the list to try.

    Snack sticks are one of my favorites to make for my family and share with my friends. Especially when we harvest an elk or a deer! Thanks for the educational video Eric :) Cheers!

    Hi Eric. Love the celebrate sausage series. I have a older grinder that Has seen better days. Its very loud and feeling its age. I have a manual stuffer but would love to move up to a electric one. Live the channel! Keep up the good work!!

    I've been using a small manual stuffer, but being able to use only 1 hand to manipulate the casing+stuffed end usually ends in more air bubbles, specially for medium to larger diameter sausages. Great job on the sticks, love this way you are showing that utilizes ECA!!!

    Another great recipe! I am currently using a manual 5 lb stuffer by Hakka. I hate having to reload all the time, but it gets the job done. A new electric would make my world. Thanks Eric for a great month of videos, kepp up the great work!

    Currently using a 5 pound stuffer, but the electric one would eliminate multiple fills and wear and tear on my arm. Thanks for a great season 4.

    Hey Eric! Appreciate the videos they help me up my game for sure. My current grinder is a Cabelas 3/4hp commercial carnivore. Only because my old one burnt out last Easter and Cabelas was open! Thanks again for passing on your knowledge.

    We usually make sausages as a family, mostly fresh but some smoked too, love this recipe for sticks. That electric stuffer seems to make things easier, we usually stuff with the grinder horn but get all mushy.

    I currently use a manual 5lb stuffer like you've been using all season! It works amazingly. However, for larger/bulk batches, it would be great to eventually have an electric stuffer! Thanks for another great season!

    Just to mention, I use a Kitchen aid to stuff my sausage casing which you know is a pain in my pinky toe!

    I inherited a Kitchen Aid that I have used both grinding and stuffing.
    A dedicated stuffer is on my list.

    Just purchased A LEM 10 lb. electric stuffer. Always used the hand crank before. Hopefully it will be a game changer. Really enjoy your channel and trying your recipes

    Would love this! Hand mixing is good, but would love to put it into casings instead of patties. I could also expand to all types of sausage.

    I started out struggling with a funnel and a cookie shooter, but now have a small manual stuffer. This 25 lb electric sausage stuffer would be great.

    Thanks for another great video. I currently stuff my sausages using a 5-pound stuffer which works great as long as you are making smaller batches. The 25-pound electric suffer sounds perfect for any serious sausage enthusiast making larger batches.

    I've made a lot of sausages, but never pepperoni snack sticks. I can't wait to try this out. The encapsulated citric acid seems like a nice touch also!
    My current setup is a 0.5HP grinder and a 10 lb sausages stuffer. Both are just "ok" and I've been eyeing The Sausage Maker's products for upgrades for a while!

    I have a dedicated hand crank stuffer and I made my first batch of jalapeno cheddar sausage with it 2 weeks ago. It is some of the best sausage I've ever had!

    Eric my friend you made my day. I love pepperoni. So much so that when it comes time to make pizza I wind up eating as much pepperoni as what goes on the pizza lol. Now I have a go to that will insure that I will have enough to build another pizza. I love your tip by balling up the meat to get that cold sticky meat to make another pass through the grinder.
    I started out using my meatgrinder to stuff but made the big upgrade by getting a 5 pound stuffer that has a high and low gear crank, just move the crank handle to which speed I need. That was such a game changer.

    I current grind with a #22 grinder, best upgrade I've ever made. However, I stuff with a 5 lb and 15 lb manual stuffer, good but for the larger batches it can take a bit of time. An electric one would be awesome.
