I think the way he does it is based on reading the person's personality. It's the same technique he uses to guess the card that people are thinking of. Certain types of people pick 7s or Queens, certain types are attracted to different suits, etc. At least, that's the way he explained it in a book of his I read a long time ago. As for your coincidence, lots of people watch these videos and there aren't too many combinations of odd number pairs, so that's bound to happen.
