Sourdough Brioche with Apple and Cinnamon / 01- baking with sourdough instead of yeast.

- As promised, I’ve embarked on my challenge of "Replacing Yeast with Sourdough Starter." With Autumn upon us-the richest season of the year-I decided to start with the classic brioche baked in a cupcake pan. I took inspiration from the traditional recipe but added my own twist with apples and cinnamon, and, of course, used sourdough starter for the dough. On rainy days, these brioches were a delightful treat!
I encourage you to try this recipe and feel free to substitute the apples and cinnamon with chocolate, jam, or any other filling you prefer.
Ingredients
To Activate the Sourdough Starter:
50 g sourdough starter (1.75 oz)
50 ml water (3.4 tbsp)
50 g flour (1.75 oz)
Mix all ingredients together until smooth, cover with plastic wrap or a shower cap, and let sit at room temperature for 3-4 hours (or longer, depending on the ambient temperature).
For the Dough:
100 g sourdough starter (3.5 oz) (keep the rest in a sealed jar in the refrigerator for future use)
350 ml cold milk (1.5 cups)
9-10 g salt (0.3-0.35 oz or 1.5-2 tsp)
80 g sugar (2.8 oz or 1/3 cup)
1 teaspoon vanilla extract (or a pinch of vanilla powder, or 1 sachet vanilla sugar)
2 eggs
650-700 g flour (22.9-24.7 oz or 5-5.5 cups) (amount may vary based on egg size and flour quality; start with 500 g (17.6 oz or 4 cups), then add the rest as needed)
50 g soft butter (1.75 oz or 3.5 tbsp)
Oil (for greasing the bowl)
For the Filling:
4-5 apples (use more for extra flavor)
150 g sugar (5.3 oz or 3/4 cup)
30 g cinnamon (1 oz or 3 tbsp)
50 g melted butter (1.75 oz or 3.5 tbsp)
For Greasing the Pan:
10 g butter (0.35 oz or 2.5 tsp) or 1 tablespoon oil
Baking Method
Preheat the oven to 200°C (390°F).
Bake the brioches for 35-40 minutes, or until they are golden brown.
Optional Syrup:
100 g sugar (3.5 oz or 1/2 cup)
30 ml water (2 tbsp)
Boil the sugar and water over medium heat until the sugar melts and the syrup thickens, about 5 minutes. Brush the syrup over the warm brioches for a sweet glaze.

Loved hearing the storm & the rain, loved that you had tea with wild herbs & honey. Which herbs did you use. We have our own honey too (at least daughter does, with hives in my garden). And I’m a Brit who hates (regular) tea! ❤🫖❤
Hello! We use various plants for teas, we pick them in season from the plains. I have a mix of elder flowers, mint, chamomile, rose hips, linden flowers, marigolds, echinacea, raspberry leaves, blue flowers... I don't even remember what else I put in this mix☺️ I love this mix is soothing❤️☺️
