I had a similar issue so I just increased the size of the offset path to make sure it covered all the space between the lines, creating a solid background behind the initial text.
HELP! I'm trying to achieve the same effect but using a png instead of text... any idea how I can generate a path from my png's outline? Would be a MASSIVE help! Ta
One way to do it in Photoshop is by using Layer Styles. You can do it manually by adding a stroke of say 10px then adding another stroke beneath it of 20px and the next 30px and so on... I'm sure you can create an action but I managed to make this effect on a png pretty quickly as you do it all in the same dialogue box. If you need further help let me know.

Tried this out. But, with a longer message and everything just looks jumbled together now when I do "offset path". Any tips on how to fix this issue?

So it doesn't collectively become a path. For example it's becoming a separate path for "Dream" and separate for "on" Help please.
