That man succinctly worded how I felt working in the restaurant industry these past few years. Costs have risen so much that to provide a product that both the customer and the producer love at a reasonable price cannot keep doors open and it's terrible that it's struggling people trying to keep the dream alive.
Edit: love the people that keep craft food alive in today's time
I 10000% agree. But at the same time I have to wonder if he raises the profit margins on the OTHER products in order to make losing money in the beef ribs “acceptable”. 🤷🏽♂️
@@jeffreywhitaker5154 possibly, sometimes you need a loss leader as it helps sales with higher margin items like sides and alcohol
That's what sides and drinks are for.
Absolutely love this series with Bryan. He’s a great host and he obviously knows a ton about food but lets his guest do most of the shop talk which I appreciate.
Thank you!
El Paso, my hometown.
Delivers again!
I'll say it again, these segments with Bryan on the road are my absolute favs! This time is no exception, the chef's passion is delightful to watch! My only regret is I live in WA state, there is no TX BBQ ribs like the ones he is eating, man, that makes me so sad! Please continue this content, I love it!!!
Thank you!
Wow! All of that food looks so very delicious! 👍🏻
I grew up in Houston, TX. I thought beef ribs were the ONLY kind of ribs. Now I live in the Eastern US. Folks over here have only heard of pork ribs. They're NUTS!!!
Actually, I'm in Houston right now and headed to go eat beef ribs this morning. I'm very excited.
@@BryanRoof-CooksCountry Beef ribs are the BEST!😋
I am very impressed that he got through the day without a single BBQ stain on that light colored shirt! 😊
It's a problem. I actually burn through shirts like nobody's business. I'm open to shirt sponsors.
i want to know more about the green chili cheese rice and the marinated jalapenos
Yup, I NEED that Green Chile Cheese Rice....
These probably help with the margins. I have had toreados before. So good spicy, vinegary, salty, and that rice? I’d go there just for those. 😻 Well actually, I’m kidding. I’d need some ribs too, and I was wondering what kind of sausage that was on one of the plates.
Yeah those were two outstanding items on the menu. I need to do a recipe for both for the magazine at some point.
The sausage is made in house and it's some of the best I've had. It's typical of what you find in Texas, but a standout among its peers. I know Richard worked hard on getting the recipe just right. @@chrisandersen5635
Man oh man!!!
You had me at Texas BBQ.
Same.
This BBQ looks amazing!
Beef ribs are one of my bucket list foods.
It all looks delicious. Excellent video.
What an amazing episode! I love some good barbecue too!
El Paso? That’s East New Mexico🤔 😂🤠
Salivating
Smokin' J's Barbecue in Beatty, NV 🤤 Great place for dinner after a long day in Death Valley!
Bryan - thanks for a great video I like the better content. Research detail, mouth watering to watch.
Thanks!
Okay....now I want to plan a trip to El Paso 😂🌟🎉👍😎😀🌻
For down home Texas BBQ on the west coast I stop at neighbors BBQ in Prosser Washington
Awesome!
Oh my 😍
Can we get the 1 hr cut of Bryan just eating and commenting? I would watch that.
I think we can splice it all together to make a holiday special for you.
We got a few good bbq places in north texas. The branding iron and prines. You should try 'em
Folks that haven"t had beef ribs,Don"t know what their missing.
Those ribs!!!
I definitely need to take a little road trip east
Out in a west Texad town of El Paso....
I definitely listened to my fair share of Marty Robbins while in the southwest.
Was that paper they were using Parchment paper?
Food-safe butcher paper.
The next part of this episode was using the snake method on a charcoal grill to cook this at home. If you watch that, I did the brisket with his method and will say this: DO NOT follow the instructions of opening the lid damper all the way. I did and mine cooked too fast and did not come out great. I later found Weber's damper instructions:
BOTTOM dampers fully open
TOP damper:
Smoke zone 225-275, 1/4-1/8 open
Low 250-350, 1/4 open
Med 350-450, 1/2 open
High 450-550, fully open

Rudy’s!!! Rudy’s Country Store and BBQ ALL DAY!
I know meat sweats when I see them.
Haha! Yes. I was in a full meat sauna.
You should visit Lexington BBQ in Lexington, NC. For some NC BBQ. Or You could try Pulliam's BBQ and hotdogs in Winston-Salem, NC.
But, WHY??? Texas BBQ is the best on the planet. Why downgrade to puny pork BBQ when we've already tasted the best: Texas Beef BBQ?
@@TheSouthIsHot While Texas BBQ is good. By Texas BBQ I only mean Brisket. Your Ribs are not better than the Memphis or Kansas City Ribs. Whether it's whole hog or pork butt it's just better in North Carolina. Not to mention Memphis in May has more than just a brisket category.
That's not snacks mate! That main course for 12 people or more.
anybody know how to make that green chile cheese rice?
Will work on a recipe for you.
Do you ever miss your family? Being on the road so much must be hard! I guess in the name of Ribs it's OK!

A lot of Texas barbecue places are not good in my opinion, only a select few. I’ve only been there twice I think but there’s so many barbecue places in Texas that you have to be careful where you go
First
Whoopie
So he's doing what his WIFE wants him to do. NOT what HE wants....Smh
Really? That was your take away after watching this video where he clearly shows how passionate he is, and has been since day 1? Did you hear his closing words? Is it so inconceivable that you and your life partner actually SHARE a passion? I feel so sorry for you.
What?! She’s actually SUPPORTING and cheerleading her husband’s passion and alllll the time away to do what he loves to do!
