    The bruschetta in a jar recipe is great. We like to drain a tiny bit if liquid from the jar and mix in some olive oil when serving. It's a bit runny just as canned. My teenagers love it on Toads in a Hole (eggs fried in a bread piece with circle cut out). They top it with the Bruschetta and a sprinkle of parmesan. So good!

    You are so lucky to still have farm markets. I live in Nebraska and I don't know of any that are still open or selling these late harvest veggies. They seem to concentrate on tomatoes, melons and corn in the summer then nothing. Love your pantry, looks great with all that yummy food.

      Oh wow that sucks! Here it's the other way around... we have trouble finding things like bulk tomatoes and melons don't really grow well here...

    I use those spaghetti sauce jars, too. Perfect for canning my chicken pieces. I bought mine years ago when they went on sale for .99.

      They certainly aren't rhat price here now lol!! I think last I looked they are 5.99 a jar regular price! But they are the perfect size I find for canning things😀

    please explain to me why storing food like this works and howlong does it last.. I want off the grid!!!

      Canning food like this, if done properly and using safe canning methods and guidelines, can last for a very long time. Most canning guidelines say you should use them within 1 year but honestly we have used well beyond that. The heating process used in canning, if done correctly, kills microorganisms and and deactivates some of the enzymes in food to keep them from spoiling. The jars end up vacuum sealed after this process....so it's a fabulous way to preserve food without having to have freezer space...great if you want to be off-grid! You can use both waterbath and pressure canning methods using an outdoor propane cook stove if you didn't have electricity.

      I can't see why not since you're able to can things like chicken vegetable soup. I would just follow the pressure canning guidelines for a soup.

    Par cooking potatoes takes the starch out of them so they won’t be cloudy in the jar.

      And the starch keeps the heat from getting thru the jar evenly.
