im doing a presentation about sashimi at school and im going to use rainbow trout but i couldnt find a video to see how to fillet and skin a rainbow trout and then i stumbled across this video very informative and helpful for an amateur like me hope you keep up the great work

NEVER eat fresh water fish raw. The parasites in ocean fish are large enough to actually see when you cut the fish up for sushi. The parasites in fresh water fish are too small to see, so the fish should always be cooked. You can survive it and get lucky to get a fish that was safe, but there is no way to tell...until you are sick...or not. I love sushi and used to make it at home all the time. I've done a lot of research on this. Also, dont let anyone tell you frozen fish is not safe or good for sushi. I would not go buy a block of frozen fish from the freezer section of the supermarket, but if you get a good deal on fresh tuna from a quality source, dont be afraid to freeze some and eat it raw later. I watched a food show where the host went to Japan to eat at a sushi chefs place who used to be famous in the U.S.. He moved to Japan to fulfill his dream of having a sushi place in Japan. His "secret" was, he froze all of his fish for sushi preparations because it makes the fish more tender and easier to bite and chew. I think this is true for many meats. Even deer meat, I swear it is more tender after it has been frozen. Freezing explodes a certain number of cells n the flesh so it makes sense.
Thanks for the technique man! Pretty much no wasted meat when I do it this way. I like to dry out the skins in the smoker for some homemade dog treats. God bless

@@calipete As a requirement for filleting trout at the trout farm you have to be able to fillet enough trout to where you are really good at it and you get passed off so you can fillet the customer's trout. I think I filleted about 15 fish before I got signed off and by the time I had done a few dozen it was like second nature. Of course one can always improve and if you don't fillet a trout for a while it will take a few to get back on the bike so to speak. Keep at it and don't give up.
Generally speaking the Rapala filet knives should be sharp enough to filet and skin trout right out of the case. Every blade is different though. When I need to sharpen the filet knife I use either a steel rod sharpener or a wet stone. I have a video on my channel showing how to sharpen a filet knife.
You make it look so easy! I watched 3 of your trout fillet videos and still had a rough time. I think my trout was a bit smaller than the ones you guys make videos with, but man, my knife didn't slip through as simply, and when I tried to skin it, I couldnt keep the fillet in one piece. I was using a 4" rapala fillet knife and the knife was brand new except for the gutting. Are there other tips to cutting a fish? Never really did it before until now.
The most crucial things about filleting a trout is making sure the knife is sharp, which most brand new knifes should be, and keeping the knife tilted at the right angle. If you are angled too far one way you will cut too far into the meat and will lose meat. If you are tilted too far the other way you will cut through the bones and leave them. It is a delicate balance that takes lots of practice. Once you figure it out it will be the best thing you do to prepare a trout.

The video was good, but I still had a row of small bones left in the middle, where the backbone was. Maybe I did not cut deep enough into it in the initial stages. I will see how I get on next time. I'll let you know :)
Sometimes if the knife is angled to much towards the spine you will end up leaving some bones in the meat. With practice you will know exactly how to angle the knife so that that doesn't happen anymore. When it does it is pretty easy to just shave off the bones from the meat.
SofaKing's StupidFishing It is in theory, but one main concern i have is that it is easier to leave the skin on so that you have more to hold on to. Plus, if you want them butterflied, you want to leave the skin on until the end.
