Chow Mein Noodles | TAKEOUT STYLE

- 1 tsp Extra Virgin Olive Oil
1 Carrot, julienned
1 stalk Celery, julienned
1/4 yellow Onion, sliced thinly
1/4 head of Cabbage, sliced thin
Handful of Bean Sprouts
Pinch Salt
2 packages of Fresh Pancit Chow Mein noodles
Sauce:
1 Tbsp Soy Sauce
2 Tbsp Oyster Sauce
2 tsp Black Vinegar, Rice Wine Vinegar or Mirin
1 tsp Sugar
1 tsp Honey
1/4 tsp black pepper
1 tsp Sesame Oil
1 Tbsp Mama Teav (mild) optional, if you like mild spice
1 Tbsp Sriracha (optional, omit if you don’t like spicy food)
3 tsp Cornstarch
1/3 cup Warm Water
In a Wok or wide-open skillet, add olive oil to a MED heat, followed by the carrots, celery and onion. Saute on MED heat for 3 mins, when onions become translucent, add the cabbage and beans sprouts; cover with lid and saute for 3 mins, tossing after a minute and half.
Blanche the fresh chow mein noodles in boiling water for 2-3 mins, drain and add to wok with veggies. Add the prepared sauce just after the noodles and saute on MED HI for another 1-2 mins (without the lid) until the sauce is thickened and fully coated throughout the noodles. Remove from heat and serve immediately
