100 g grated cheese I prefer Cheddar but Gruyère is good too
300 g Shortcrust Pastry
3 large eggs see my size chart below
1 onion finely chopped
150 g double cream
100 g butter
Salt to taste
Pepper to taste

You inspired me to try baking quite a few desserts, most recently your traditional egg custard tart.
I’ve now upgraded slightly to keeping milk kefir grains culture and gluten free sourdough starter going.
I recently made sourdough starter discard cherry scones and then a batch of chocolate chunk scones.
Thanks for making baking easy for me, especially the weighing liquids!

I will be making it on Tuesday, will let you know how it turned out. I'm 66 and like the good old fashion way of cooking, I like your style, I think we are going to get along. Cheers Mr Paul.

Great to see you Mr Paul, was there No need too blind bake as I've made quiche b4 without blind baking and the bottom wasn't cooked so reluctant to not to blind bake!!!
Hi Cookerkin, if you follow my recipe (don't try converting to cups!!) there is no need to blind bake. I've made things like this for 60 years in the bakery and we never had time to make things that neede blind baking, trust me, this came out perfect.
