傑少,我個人都鍾意炒滑蛋。下次可以試下我炒嘅方法啊。大火熱鑊之後,熄火再倒雞蛋落去。炒蛋嘅時候,鏟底嘅雞蛋上面,不斷重複。如果隻鑊開始冷卻,見到雞蛋邊有少量泡沫,就開一開大火,然後再熄火。雖然工夫麻煩,但係滑蛋無咁容易炒老,可以試下啊!
