Never run out of eggs again! Preserve eggs two ways.

  • Two easy egg preservation methods that don't require any refrigeration: freeze drying and liming (aka waterglassing). When your chickens give you too many eggs, be smart and put some aside for a winter's day.

    Egg Bread Recipe (makes 2 delicious loaves)
    1/2 oz active dry yeast
    1/2 cup warm water (110 - 115 F)
    1.5 cups warm milk (110 -115 F)
    3 large eggs
    1/4 cup softened butter
    1/4 cup sugar
    1 tbsp. salt
    7.5 cups all purpose flour
    Egg wash for brushing loaves: 1 egg yolk + 2 tbsp. water
    Sesame seeds and/or sea salt
    Dissolve yeast in warm water (5 min). Add milk, butter, eggs, salt, sugar and half the flour. Beat on medium until blended, then add more flour until a rough dough forms.
    Knead on a floured surface for 8 minutes until dough is smooth (seriously, 8 minutes). Place in a lightly greased bowl and cover to proof for about 1.5 hours in a warm location.
    Punch down dough and cut into 6 sections on a floured surface. Roll each section, then braid 3 sections together into a loaf, twice. Cover loaves and let rise for about an hour. Preheat oven to 375.
    Brush loaves with egg wash and sprinkle with sesame seeds and sea salt. Bake at 375 for 30-35 minutes. Let cool on a wire rack.
    To give credit where credit is due, I found this recipe on Taste of Home (Homemade Egg Bread) and I've been making it successfully for several years. If you like brioche, this is the closest thing to it I've found - but much faster!
