There are quite a few college players who were known for hurdling over defenders. They then try that in the NFL and get shut down almost immediately. The biggest difference between College and the NFL is the level of skill on defense. You're not leaping over the pros and they'll intentionally punish you for trying.
One comment you made about interceptions being easy. The men that play this game are MONSTEROUS (220+) and they can run uncharacteristically fast. Watching it on video is misleading. Wrenching a ball away from someone who doesn't want you to have it at that size and speed. not an easy thing to do. catching the ball, when others are in the same pursuit, running at full speed? also, not easy.
