You can fight him in the middle, defeat the giants throwing barrels and they won’t respawn. The fight takes FOREVER unless you use blunt damage, the Large club you get in blighttown puts in work.

Actually what makes darksoul difficult is their level design....or roughly i could say "dirty cheap trick" multi boss level with trap, mob minions with also with trap, fall death, floor with mud make you dificullt to walk normally with a mid boss wielding halberd.
Gravity truly is the hardest boss in Dark Souls.
