Thanks for sharing this. I`m visiting Bruges and Ghent this week, so I`m following some of your advice. Tomorrow, I`ll go to Cafe Vlissinghe. Just for anyone reading - there are two kinds of Belgian waffles: Brussels Waffles are crunchy on the outside but fluffier inside, served with a variety of toppings like strawberries and whipped cream. They are puffier and rectangular. The ones which have an irregular shape and look denser and not raide so high are the Liege waffles. They are sweeter and are made by pressing a piece of dough in the waffle iron. They are often served with chocolate sauce. They are not so soft and fluffy and are smaller in size. Just make sure which kind you`re going to get as some cafes only serve one type. I had to look around for about 20 minutes before I found the Brussels waffles.
