I have adhd too and as a 26 year old man, I find the same comfort and relaxation in chefs voice. I’m glad your son found this at such a young age. I would have killed for access to this (and many other things) when I was a kid!

50 years ago when I lived in New Orleans we would stuff the eggplant with shrimp and crabmeat. My in-laws were Cajun and the best cooks on earth! I'mmagonna make some stuffed eggplant this week-end! Have a great day...

If anyone ever invents a time machine, one thing definitely on my list would be to go back to when you had your restaurant so I could make a reservation, and I would book a flight from the UK to visit and experience your amazing food. But this channel is the next best thing and it's fantastic, the only difference is I have to cook the food myself and it brings me great joy and great knowledge doing it. I learn new things every week watching, thank you 🙏
This looks amazing! I grow my own eggplant because I love making it so many ways: grilled, caponata, parmiagiano, as lasagna, dip, in tomato sauce over spaghetti, tossed with other veggies in the frying pan, but my favorite is grilled ratatouille. I have never stuffed it, and I do love sausage recipes... Can not wait to try it! 😋😋😋 Learned a few tricks watching here how to prepare it, too. 👍
I recall the first time eating ratatouille in a nice restaurant... it came with my protein choice. I raved about how delicious it was and asked the servers about it. I raved+ so much about it they brought chef (whom was French) out and I complimented him. To this day, it was THE BEST vegetable dish I have ever eaten in a restaurant... and that was in the early 70's. Memorable!
If you grow your own and even make caponata 😋😋 ... then you should try and make Pesto di Melanzane. So delicious 😉

I have been to several restaurants around the world and I can tell you that I have a system that tells me how to turn restaurants into family.
I make my reservation, order a drink and appetizer, ask to speak to the chef, watch the orders come out of the kitchen and if the chef comes out and speaks to me with pride and experience I'll then give my order. This will ultimately cause me to return several times per week with new customers and they bring in new customers. I'm so loyal to those restaurants and then I feel like friends or family members are feeding me. Chef JP, you seem to be one of those wonderful chefs! Therefore, I'm loyal to your channel and refer your videos out to other people and especially chefs.
Funny thing: I’ve noticed other cooking channels “learning” from Chef too! Emphasizing the importance of “Mise en place” and when to season and how to cook garlic: add at the END and only until “fragrant,” then add stock! Thanks for making all of us better!
Regardless of where it's first learned, it's actually long-standing standard operating procedure.
My son just recently left home for University; he tells me all the time that the best advice I gave him was to watch Chef JP. He’s cooking and eating well. 🙏🏽

My friend, after cutting and scoring the eggplant try using a grapefruit spoon to scoop it out. It does make it a a bit easier to do. That recipe is absolutely mouthwatering delicious !!!! Much love.♥️

11:48 Great recipe. Sort of reminds me of my mum's stuffed eggplant. I created a vegetarian version with your hints on how to prepare the eggplants and the stuffing. It had eggplants, zucchini, bell peppers, tomatoes and rosemary from the garden. I also put onion, garlic, celery, pumpkin and mushrooms. It was delicious. 😋

My Italian American grandmother made this dish for me growing up. I loved it. It was one of my favorite things to eat. The only difference was she didn’t make a pepper couldi but but I now plan on doing that that looks like it would be amazing!!! Thank you!!!

I would love to see you make some Moussaka. It was the dish I discovered a year ago that introduced me to eggplant. It's very delicious and I crave it every couple of months. It's a time consuming dish, but it's worth it. 🤤

Great way to incorporate eggplant in your diet! Eggplants are very bladder, kidney, and prostate friendly for those who suffer from those afflictions. Another great recipe. I prefer white eggplant or the "striped" purple and white because they are not as bitter.
Unrelated to this, we went to a local Italian restaurant a couple of days ago. They have excellent pizza, but their other entrees leave a bit to be desired. Their soups were bland and watery, so I spoke to the owner (being the shy person that I am 😁) and asked if he ever watched you on TH-cam and he said he did. I tried to tactfully tell him to use some of your soup recipes (and others as well). They have two kitchens, one that does all the baked goods and one that does everything else. Hopefully, they can improve what comes out of the second kitchen.

My mom used to make this with chopped meat and rice and fry it but she used small Italian eggplants … eggs herbs bread crumb, onion garlic I haven’t made this in a while now I’m in the mood for it ..
Baking the eggplant shells in the oven is a nice change.
I learned this recipe by boiling the eggplant. This makes it easy to scrape and make them hollow and make their skins soft.
I will try your way.
When you boil the eggplant, the scrapped innards are soft too, and I cut it in litter pieces and join it to the ragu.
