The wings are made out of gum paste a week prior so they dry hard before attaching to the cake. Sorry for sch a late reply, I dont check youtube often
Is the buttercream a chocolate ganache?

It is a small ball of fondant on a fondant covered skewer. You could use a cake pop if you wanted to. I hope that helps
