Mushroom cream soup: the quick and easy recipe!

  • Hello everyone, how are you?
    Autumn is knocking on our doors (to tell the truth, here in Germany it feels like it's already deep winter) and so let's start pampering ourselves with some delicious heart-warming recipes.
    The mushroom cream to be enjoyed with toasted bread croutons is one of those recipes to indulge in while it's raining outside.
    I preferred to use 200g of porcini mushrooms and 200g of champignons, but you can choose the mushrooms you prefer, even the dried ones (first softening them in hot water obviously).
    As you have seen in the video, I take a small part of the mushrooms before cooking them and sauté them with olive oil, garlic and parsley, so as to also have a solid taste.
    Adjust the density of the cream with the broth.
    It can be kept in the fridge for up to 3 days or you can also freeze it.

    Doses for 4 people:
    400g of mixed mushrooms
    200g diced potatoes
    1 leek
    500g of vegetable broth
    1 clove of garlic
    2 slices of bread for croutons
    parsley
    olive oil
    salt, black pepper
