the Lemper originally wrapped with banana leaf, the leaf enhanced the aroma. just like the leaf gives an aroma to your nasi bungkus

The "sweet" on Nasi goreng is from Kecap Manis aka sweet soy sauce. Basically Indonesian soy sauce is little bit more sweet than other soy sauce.

The sweet taste of fried rice comes from kecap manis which literaly translates to Sweet soy sauce. It is always used in every fried rice to give a balanced taste after adding salt and pepper.

The lemper is made from a sticky rice, seasoned with coconut milk, garlic, coriander, etc. thats the reason it has a flavorful taste. And also it’s very different with tamales. The taste and the texture is super different 🤌🏼

    • @JessicaGrey

got stumbled upon this video, and glad i decided to watch it :) thank you for trying all the foods
Bahasa Indonesia is one of phonetic language, so there is a direct relationship between the spelling and the sound
    especially the vowels
for a, like the a of delta, or when dentist asks us to open mouth and say "aaaa". as such, all the "a" of Jakarta and Malang are spelled the same
for i, like both i of India
for u, like both u of Zulu
for o, like the o of bravo, tango
for e, there are 2 variations, which both are present in "enter"
"sate", "goreng", and "tektek" are pronounced using the initial "e"
while "lemper" and "risoles" are pronounced using the second "e"
so it'll take a while to learn which words use which e :)
"simpang" is a shortened form of "persimpangan", omitting its prefix and suffix
it has several meanings, but in this case, the closest one would be "crossroads"

  • @soya9584
    @soya9584 2 ปีที่แล้ว +24

I think the "sweet" profile that you tasted in nasi goreng and mie tek tek is from sweet soy sauce. It is a common ingredient to put in lots of Indonesian food. Hard to find it outside the Indonesian dish. I am glad you like it!

for lemper, you can pronounce the lem like lam (luhm) as in 'bedlam', and per like in 'per se'. Seen in the video is a 'naked lemper' lol, as it's traditionally wrapped in banana leaf, grilled over fire, and served with the wrapper intact after it's cooled down. The restaurant was probably saving customers the hassle of peeling off the banana leaf wrapping, and some people may not like having burnt shreds of the wrap over their lemper once peeled lol. There are some dishes in Indonesia which are very similar to your Ecuadorian Ayaca (at least by presentation) besides the lemper. Some are savory, some are sweet. I dare say that if an Indonesian (especially from Jakarta) saw Ayaca and had not been told that it's South American, he/she would assume that it's a type of 'Pepes' or 'Arem-Arem', two other dishes of ours.
Nasi Bungkus: this simply translates as 'wrapped rice' or 'rice-to-go' in Indonesian. In fact 'nasi bungkus' is a term as generic as the Japanese Bento: the components other than the rice itself can be just about anything and they don't have to be entirely local/traditional.
Sate/Satay: we don't normally serve sate like that: two skewers of huge chunks of chicken fillet and separate sauce. Here we use smaller cuts and the sauce is spread all over the meat/skewers.

As for Chicken satay/sate. They're usually sold as a street food here in Indonesia, and they look completely different than the satay you guys just ate! The meats are smaller but they are quite juicy. And served with the peanut sauce poured on top (or sometimes with Soy sauce mixed with chili pepper) . They do have that smoky flavor which I really like. We usually eat them with rice.
And they are also sold along with Satay made out of goat meat (Goat Satay) and I definitely like them more than the chicken satay.

and lemper is usually a savory dish here in Indonesia, but nevertheless glad you enjoy it, that the essence of the food..

The sweetness came from a special Indonesian soya sauce we call it Kecap Manis or sweet ketchup. It’s made from black soya with many herbs & special Javanese pure Brown Sugar from Palm Trees.
You can buy it in Asian super market. It’s in a bottle.
Only Indonesia who made & use this kind of sauce in almost their popular food especially in Javanese Culinary. It’s bring the authentic & specific Indonesian flavour.

If you try in Indonesia, the flavor will be greater. Thats for sure. Do you know in Indonesia nasi goreng price just 1-1,5 USD?
