THIS IS WELL KNOWN CYPRIOT SAVORY BREAD KNOWN IN TURKISH AS PILAVUNA AND IN GREEK IT'S KNOWN AS FLAOUNES
INGREDIENTS I USED MADE 17
FOR THE INSIDE FILLING
500 GRAMS OF HELLİM / HALLOUMİ CHEESE, THINLY GRATED
500 GRAMS OF STRONG CHEDDAR THINLY GRATED
2 TABLESPOONS OF SEMOLINA
1 PACKET OF BAKING POWDER
1 CUP OF SULTANAS
5 EGGS, 4 TO BE USED AT THE BEGINING , AND 1 TO BE USED JUST BEFORE YOU START TO MAKE THEM
FEW CRUSHED ANISEED, MASTIC, AND MEHLEPİ, IF YOU CAN GET HOLD OF THESE, WILL GIVE NICE FLAVOR TO THE PİLAVUNA / FLAOUNES
FINELY DICED FRESH MINT, IF NOT FRESH THEN USE DRIED MINT, TO BE PUT INTO THE MIXTURE AFTER IT HAS BEEN RESTED FOR MINIMUM 4 HOURS, TOGETHER WITH 5th EGG IN IT .
FOR THE DOUGH
3 MUGS OF ALL PURPOSE FLOUR
1 TABLESPOON OF DRIED YEAST
1 TEASPOON OF SALT
1 EGG
1 CUP OF WARM MILK
HALF CUP OF OLIVE OIL
FEW CRUSHED MASTIC AND MEHLEPİ
FOR THE TOP
1 BEATEN EGG WITH MILK TO BRUSH OVER THE PİLAVUNA / FLAOUNES
AND MIX OF SEASEME SEEDS, ANISEEDS, AND POPPY SEEDS, TO SPRINKLE OVER.
.
TO BE COOKED IN PRE-HEATED OVEN AT 180 DEGREES, UNTIL GOLDEN ON TOP, ABOUT 20 MINUTES.
