World's best recipe from Egypt: pastry pockets filled with ground beef - incredibly delicious!

  • My Egyptian friend shared this delicious family recipe with me and now I just can't get enough of it. The fluffy, slightly sweet dough and the aromatic, seasoned meat create a mind-blowing explosion of flavour!

    Ingredients:
    Dough:
    • 300g flour
    • 2 tablespoons sugar
    • 5g yeast
    • 3 tablespoons oil (45 ml)
    • 170 ml lukewarm water
    • 0.5 teaspoon baking powder
    Filling:
    • 500 g ground beef
    • 2 medium onions
    • 3 cloves of garlic
    • 1 tomato
    • Half a green pepper
    • 2 red chili peppers
    • 1 good teaspoon of salt
    • 0.5 teaspoon black pepper
    • 1 teaspoon paprika
    • 0.5 teaspoon allspice
    • 0.5 teaspoon coriander
    • 0.5 teaspoon cumin
    • 0.5 teaspoon cinnamon
    • 0.5 teaspoon cardamom
    • 1 generous dash of olive oil
    Preparation:
    1. Place flour, sugar, yeast, oil, baking powder and water in a bowl and mix until a dough forms. Knead for 5-8 minutes until the dough becomes elastic and smooth. Then cover it and let it rise in a warm place for 30 minutes.
    2. Now knead the dough again and divide it into 6 parts, form dough balls and let them rise covered for another 30 minutes.
    3. Chop the onions, tomatoes, garlic cloves, peppers and chili peppers very finely. Drain and squeeze out the excess liquid.
    4. Mix the ground beef with the vegetables, spices, tomato paste and oil and form 6 meat balls from the mixture.
    5. On a well-oiled wooden board, flatten the dough balls and pull them apart, place a meat ball in the center and close the dough around it. Then flip and flatten it until you have a flat pastry pocket. Prick several times with a fork, then brush with oil.
    6. Preheat the oven to 180°C/350°F and place the filled pastry pockets on a baking tray lined with parchment paper. Bake for approx. 5-7 minutes on each side.
