The Science of Filter Coffee

- Coffee has been around in India for longer than tea. While the legendary story of Baba Budan smuggling in coffee beans in his hair about a thousand years ago is hard to verify, its large scale cultivation in Coorg and Chikmagalur at the turn of the 20th century and the emergence of a new social elite in the form of South Indian brahmins that became powerful players in the British Raj's bureaucracy, the filter coffee has cultural influence that far outstrips its actual levels of consumption. Tea continues to be the most widely drunk caffeinated beverage in most southern states (with the exception of perhaps Karnataka) among the working class population.
The association with the social elite is also rather ironically contrasted with the cost-cutting practice of adding chicory powder to the coffee that the British introduced when coffee became a scarce and expensive commodity. But unlike other forms of "adulteration", chicory came to be embraced as an essential additive - adding a woody and caramel note that distinguishes filter coffee from espresso style drinks.
While actual coffee experts will give you a complex series of steps, I'm sharing what my mother has done over the years.
1. Buy 85-15 coffee/chicory powder from a local coffee seller that will grind the beans fresh
2. Add a teaspoon of sugar to the filter. Pack the coffee in. How many spoons and how much water is something you can figure out depending on how strong you like the decoction. There is no single rule. Try for yourself
3. Add boiling water and let the filter drip
4. Heat full fat milk but do not let it come to a boil - overboiling denatures the milk proteins and gets you a thinner texture in your coffee
5. Use gravity to let the mixture froth up using colloid science

As with most foods, our relationship to them is about our own nostalgia, what we grew up consuming all our lives. Filter coffee is no different. It is not intrinsically a superior coffee drink, nor is it an "adulterated overrated abomination" as described by hardcore coffee hipsters. We all enjoy the simple things we grew up consuming.

This mesmerizing piece took me back to Sri Mangalambika Vilas Coffee Hotel in Kumbakonam..the birthplace of the famed 'Degree Coffee'. Had arrived at lunch time and waited for two and a half hours at the cafe for just the taste of it as they wouldn't serve any coffee before 4:30 in the evening! Ah..memories!🤤

I've always wondered -- is there a difference between coffee brewed in a french press versus a South Indian (or Vietnamese) filter? I do find that boiling water makes french press coffee bitter, unlike in the filter set-up, but after having adjusted for water temperature, is there a difference?

Wait what! Boiling the milk can make it feel watery? This is what I have been doing wrong! Also any tips on what temperature water would be ideal to extract the most flavors out of the coffee without burning? Considering these molecules you speak of are so volatile under such higher temperatures, the temperature of water makes all of the difference I would think

That's a wonderful vlog on coffee.. The filter, davara glass and the jaadi.. All so familar like most south Indian homes🎉 . I also tried this method. Add 1 tbsp coffee powder in the filter, then place the plunger followed by 2 tbsp coffee powder. Followed by hot water. This method gives a distinct flavor.. Quite different and nice

I never knew you shouldn't let your milk come to a boil for any milk based hot beverages and the neat little trick of adding sugar before you put in your coffee powder to make it taste better. I can't wait to try this tomorrow morning and taste the difference. With that being said, which brand of filter coffee do you swear by that is easily available in the market if one can't make their own mix. Also, do you have a brand that you keep using? Excited to try them out.

@krishashok sir these days doctors have started an issue with adding milk to coffee decoration, saying liver will be damaged due to mixing of milk? Instead saying choose black coffee or black tea without milk and sugar? Could you please put more science insights on this matter as well?

Hey Comment Section/ Krish Ashok Sir -- I have a question, being from north of India (that too Punjab) so please don't mind my Noob question.
I too have a South Indian Coffee Filter like yours, but mine also has a plunger along with it.
I put in the coffee in the filter, then press it with plunger, then leaving the plunger sitting on top of it I pour boiling water.
So my question is should I take out the plunger while pouring boiling water in it?

No you can keep it! Just that a lot of experienced folks just skip the plunger after a while

Can you explain why sugar must be added in the filter? What is the chemistry behind it? Also what is the right way to make decoction? What size holes in the filter, how much coffee powder (assume fine grained) and how long should it take?
A small amount of sugar amplifies other flavours since its detection by the tastebuds primes your brain to amplify other flavour experiences to get you to eat more (since sugar indicates calories)
I find using room temperature water makes a better decoction.

I tend to like coffee without sugar. This sugar is just to amplify flavours rather than make the coffee taste sweet

Could you elaborate the science behind (if any) adding white sugar during brewing? It is scoffed at since 4 people will have 6 different measures of sugar for their cuppa... And i have read Chicory in moderation is beneficial and adds body... pl elucidate soon... you will be honourably mentioned tomorrow during the ritual :-)
Haha, in general people tend to take this too seriously. A simple food science rule is that salt amplifies sweet flavours and sweet amplifies other flavours and aromas.
