This mesmerizing piece took me back to Sri Mangalambika Vilas Coffee Hotel in Kumbakonam..the birthplace of the famed 'Degree Coffee'. Had arrived at lunch time and waited for two and a half hours at the cafe for just the taste of it as they wouldn't serve any coffee before 4:30 in the evening! Ah..memories!🤤
@krishashok sir these days doctors have started an issue with adding milk to coffee decoration, saying liver will be damaged due to mixing of milk? Instead saying choose black coffee or black tea without milk and sugar? Could you please put more science insights on this matter as well?
Wait, you made filter coffee without using the plunger??? Who does that? Edit: Not gonna point to the sugar at the bottom of the filter bulb, because, one sacrilege is enough to deal with at a time.
Dear Ashok. Loved this video and your crisp narrative, as always. One question, milk in cappuccino is recommended (by James Hoffman et al) to be heated to about 70C for various reasons. What's the optimal for South Indian filter coffee?
Hindustani cover of Narcos' theme song that plays in the background just adds so much punch to watching coffee brewing! Good stuff! (I am sure I will find this cover on your Spotify!)
cow milk added to coffee prevents chlorogenic acid(main antioxidant of coffee) from getting into bloodstream. cow milk also destroys tee's beneficial effect via same mechanism(protein binding up phytonutrients)
That's a wonderful vlog on coffee.. The filter, davara glass and the jaadi.. All so familar like most south Indian homes🎉 . I also tried this method. Add 1 tbsp coffee powder in the filter, then place the plunger followed by 2 tbsp coffee powder. Followed by hot water. This method gives a distinct flavor.. Quite different and nice
I never knew you shouldn't let your milk come to a boil for any milk based hot beverages and the neat little trick of adding sugar before you put in your coffee powder to make it taste better. I can't wait to try this tomorrow morning and taste the difference. With that being said, which brand of filter coffee do you swear by that is easily available in the market if one can't make their own mix. Also, do you have a brand that you keep using? Excited to try them out.
Sir ,u didnt give the percentage of the coffee beans...do v need to take second decoction and mix it with first?? TH-camr Healer baskar sir lately says the non veg pieces in the briyani needs to be discarded as it takes longer time to digest and the juice of the meat gets mixed in the rice while cooking..pl help😢
Born and brought up with morning filter coffees was one of the best things about my childhoods. The soothing concoction of a mother’s love and the coffee’s taste ❤
Could you elaborate the science behind (if any) adding white sugar during brewing? It is scoffed at since 4 people will have 6 different measures of sugar for their cuppa... And i have read Chicory in moderation is beneficial and adds body... pl elucidate soon... you will be honourably mentioned tomorrow during the ritual :-)
Haha, in general people tend to take this too seriously. A simple food science rule is that salt amplifies sweet flavours and sweet amplifies other flavours and aromas.
Amazing! A good coffee in any time makes a very good morning. Relishing your voice like that aroma. Good morning, Mr. Krish Ashok! 🙂 #coffeelove #filtercoffee #decoction
Wait what! Boiling the milk can make it feel watery? This is what I have been doing wrong! Also any tips on what temperature water would be ideal to extract the most flavors out of the coffee without burning? Considering these molecules you speak of are so volatile under such higher temperatures, the temperature of water makes all of the difference I would think
Mr. Ashok, your dialogue delivery & BGM are made like milk with coffee. Truly awesome. Whoever sees this, quick tends or tempts to have a filter coffee. Big 👍👍👍👍👍👍👍😄😄😄😄😄😄😄
Great work in busting the myths. Can you please tell about kadaknath egg vs normal egg. Farm raised eggs vs factory raised ones. A2 vs normal cow milk. Full fat vs toned milk. Are these worth the higher price? Thanks
Pretty much most of those premium products don't give you any equivalent health advantage over the regular cheaper one. Except full fat milk - which will give you more fat soluble vitamins!
It's like the menu card in the restaurant where it says semolina with ghee-roasted cashews with subtle infusion of coconut milk and aromatic herbs topped with cilantro and finally its upma
Fabulous video.. being a South Indian, could relate to every bit of the narration. One small request if possible- for this video the background music was too over powering, can it be of a little lower volume next time? And please continue to do your great job busting myths 😀
Can you explain why sugar must be added in the filter? What is the chemistry behind it? Also what is the right way to make decoction? What size holes in the filter, how much coffee powder (assume fine grained) and how long should it take?
A small amount of sugar amplifies other flavours since its detection by the tastebuds primes your brain to amplify other flavour experiences to get you to eat more (since sugar indicates calories)
Hey Comment Section/ Krish Ashok Sir -- I have a question, being from north of India (that too Punjab) so please don't mind my Noob question. I too have a South Indian Coffee Filter like yours, but mine also has a plunger along with it. I put in the coffee in the filter, then press it with plunger, then leaving the plunger sitting on top of it I pour boiling water. So my question is should I take out the plunger while pouring boiling water in it? Thanks!
I've always wondered -- is there a difference between coffee brewed in a french press versus a South Indian (or Vietnamese) filter? I do find that boiling water makes french press coffee bitter, unlike in the filter set-up, but after having adjusted for water temperature, is there a difference?
Hi sir is it okay to drink coffee for the health, some doctor's claims that it causes gastric,is it true?i feel uncomfortable burning sensatuon in the stomach, when i drink coffee early in the morning(before breakfast )may i know the reason sir.
Please make a video on using brass filter for making coffee. Some say it neutralizes the acidity of the coffee and is good but neutralizing acidity means the metal from brass is leaching into the coffee .. ?
@@krishashokthanks for your response. But like how we shouldn’t cook very acidic food in cast iron, is brass filter safe , considering coffee is acidic ?
@@krishashok it’s same issue of many extremes - the traditionalists telling using brass is the way since it’s always been done that way (basically no explanation) , and some using Ayurveda for an explanation (though I think the filter coffee is more recent compared to Ayurveda) and the other extreme of over exaggerating the chemical reactions and making everything sound poisonous and scary
@@krishashok right. Agree. But do you think brass is safe for coffee filter ? Brass in general is coated with tin or kalai for cooking to protect from corrosion but for coffee filter it’s not.
While I love 100% coffee for my black coffee, I prefer 70/30 for my filter coffee. 85/15 makes it too watery IMO. I'd have to use a lot of coffee powder OR use little water. The end result is I end up using way too much coffee powder than when I am using 70/30. 70/30, I found, is a good balance between flavor and dollar. My ratio is for every 40gm of 70/30 mix powder, I use 150gm of boiling water in a filter and close the lid with barely 1mm gap. The water takes its own sweet time and drips a thick decoction which mixes with 400ml of full fat milk in its entirety for my preferred taste along with 2tbsp sugar. I prepare 100ml each time and it lasts for 4 servings. Enjoy.
Enjoyed this video as a coffee lover...I will try adding small bit of sugar in that filter. Sometimes when I get time ..I soak hazelnuts , grind along with milk and then make regular filter coffee.. tastes like heaven 😊. Cheers

What do you think is holding back south indian filter from reaching the popularity of an espresso or a French press globally?
Global popularity of any food has to do with cultural soft power. It will eventually, as Indian soft power increases
Time. Espresso can be made in seconds.
The time it takes to make filter coffee will always keep it as a niche.
