Me and my husband both give this recipe 5 thumbs up! 👍👍👍👍👍 We switched out the green for the yellow zucchini (what we had growing) and the sour cream for Greek yogurt. The only other thing I added at the end was some dill fronds which complimented the lemon and creamy flavours of the marinade. This is a keeper for sure!

I made your Zucchini Fritters last week (a hit!), and the leftovers were used the next day for breakfast, topped with poached eggs and grated cheese. I’m going to try this casserole tonight; however, I’ll omit the thyme and substitute spices (cumin, Chile powder, etc) and Colby cheese to give it a bit of a Mexican flavor, with sliced avocado on the side. Maybe I’ll include some tortillas, in case anyone wants to create their own burrito.

Looks really good, you can also change it up by replacing one of the zucchini with a yellow squash, replace the cheese with 2tbl curry powder and have a wonderful curry dish 😊
Made this earlier today and it was absolutely delicious. However, despite following the recipe exactly my jasmine rice was still crunchy at the end of recommended cooking time. I ended up having to add way more liquid and almost triple the cooking time. That being said, I would definitely make this again.

You could probably use either. I always use what I have ... yogurt, sour cream, buttermilk for some things or your creme fraiche.

I have so enjoyed your other recipes and I have to say this did NOT turn out well. There was not enough liquid to cook the rice. ( I used Jasmine)
I'm having a similar issue. Just cooked covered at 350 for 20 min and rice is not cooked. Hmmm
