    As a person from north NJ, with an Italian restaurant in almost every town (not a chain) I laughed when you described it for the Midwest as casserole. But it’s true! And it looks awesome!

      I live in the Northeast as well and we have a lot of great Italian deli's and restaurants too. (Chains don't count😂) I had to smile when Kaleb called it a Midwest casserole. It does look really good. He's great!

    Oh my word, Kaleb! I made this for lunch today and it is fantastic! I love how much easier it is than breading each slice of zucchini, the texture of the zucchini not to mention the flavor. I have finally found the eggplant/zucchini recipe that tops the chart and will only follow yours exclusively. Thank you.

    Love this. I make my eggplant with recipe from the Moosewood cookbook. Slice , dip in flour, then egg, then bred crumbs. Put on cookie sheet with olive oil or avocado oil. Cook 350 degrees until brown, flip cook other side. Then assembly. It’s to die for but I love this quick method. Excellent!

      So you don't cover in salt and drain for an hour beforehand? Need to try your method.. yum

    This looks so good! I am looking forward to making it. Roasting first is brilliant. All the wetness goes away! That and a nice green salad( with your dijon vinaigrette that I love) will make a great dinner.

    Thank you! I love your dishes. Your cabbage and sausage is super (and low-carb). I cook up a lot and it lasts in the fridge a good five days and reheats even better. This is another great one.

    I have been eating zucchini all summer.
    I love it in rice dishes using it like this is a great ideal.
    I make stir fried zucchini, and many many dishes with it.
    I just did one the other day.
    I do not eat a lot of meat at all.
    So this dish I made consisted of stir fry onion celery and cut up a huge zucchini.
    I then boiled potatoes first baby ones from a friend's garden.
    I let them cool and then I sliced them.
    But them into two baking dishes added garlic onion flakes oregano and precisely other spices I have + pepper.
    Then I had cooked my rice and put more water in then needed so I added a can of cheesy broccoli soup.
    And cream of celery soup.
    Then I put the stir fried veggies on top of potatoes in both pans and I had put milk in the rice water with soups and stored it all up and then put it on top added more spice and baked for an hour.
    It came out so healthy and yummy.
    I went to my nurse today and I have lost 15 pounds eatting zucchini and summer squash plus potatoes fresh onions garlic, everything my kind neighbor shares with me.
    I feel so blessed.
    I'll look to make to these some time soon I can't wait.

    This looks wonderful. I think I would cut the sopressata into small pieces and then sprinkle over so that when it’s done you don’t have to worry about a full piece sliding the goodies off the adjacent piece. Yummy!

    I am making this for sure. Never thought to roast first. Made it with a spinach and cheese filling but of course it was watery even though I had pre prepped. This looks absolutely wonderful cant wait to have this. Love your recipes.

    Great recipe!!! TYFS. P.S. WHY do the majority of people gravitate to cutting the FIRST piece of any casserole dish (lasagna, macaroni & cheese, etc.) @ a CORNER??? Just take the FIRST slice/portion on any of the four SIDES 😲😲, AND whala/viola' one doesn't have a SLOPPY portion 😉😉.

    Why go thru the trouble of "drizzle with oil...". Just dump them in a bowl, lightly drizzle with oil, add your seasoning, mix, then place on your tray to roast? 🤷🏻‍♀️
