Ingredients
2 eggs
2 to 3 bread slices
1 small onion fine chopped
1 small tomato fine chopped
1 chopped green chilli
chopped coriander leaves
1/2 tsp red chilli powder
salt to taste
1/4 cup cheese can also be added for cheese egg toast
Method
Beat 2 eggs in a bowl add chopped onions tomatoes green chillies coriander leaves red chilli powder and salt
Beat well till all ingredients are well combined
Heat a pan drizzle little oil or butter dip bread slices one by one in egg mixture spread the veggies evemly on top of the bread
Now keep the bread in the pan and cook on meadium flame for a minute or 2 till light golden then flip side
Cook again on low to medium flame till veggies are cooked and golden brown
Remove on a plate serve with ketchup
Capsicum or bell peppers can be also added to make them more vitamin rich colourful and nutritious
