    Japan-guide - sushi rice is prepared with Seasoned Vinegar and Sake or Mirin.
    Each shop has their own flavor and ingredient for seasoning the rice.

      SnesForum - NOPE not even close, the Tsukiji Fish Market in Tokyo has the BEST and freshest fish, you can have a Great Sushi Breakfast there. Then you can walk the fish market to burn Calories.

    Remember it will not last - the fish - unless you fish sustainably. So think of your children and grandchildren would like to enjoy sushi in the future.

      You can do whatever you want at home alone. I do put Wasabi in my soy sauce.

    IF you are going to eat sushi with hands, you should wash them well First. The finish with a Hot Towel (Oshbori). Do NOT wipe your face with towel.

      Bryan Li - yes, there are also, Pressed sushi also called Box Sushi.
      It’s popular in Kyoto.
      Then there are warped sushi, they use Bamboo Leaf or sometime other fresh green leaves to wrap the sushi, you do not eat the leaf however.

      Good question! "Zushi" is a modified reading of "sushi" and uses the exact same kanji characters (寿司). In Japanese when two words are combined into a compound word, it's not uncommon to read the first character of second word slightly differently. For example "conveyor belt sushi" is "kaitenzushi" which literally means "revolving sushi." Hope that helps!

    Wait, what? They would spoil the rice for the sake of fish fermentation? I guess these were really rich people, otherwise I can't imagine how someone could make such use of rice in Japan where it is the primary food source.

      Nomad Void - I use my leftover rice to make Japanese Pickles, you can also use Rice Bran too.

      It is not a waste of good rice at all. It all started to make the ingredients (fish) last longer. "Funa-zushi (鮒寿司)" is still a whole different, wonderful traditional food. (Though some people don't like it for its strong smell.) I am from Shiga prefecture, growing up eating it. It is a pity that it has become very expensive for less are produced by few makers.

    IF you are going to use soy sauce on the sushi, use chopsticks or fingers to remove the Netta (fish), dip in the soy sauce ,then return it to the rice. Only dip one side.
