technically not a knife sharpener, as a "steel" pulls the bent edges of the knife blade back to a straighter, more consistent edge.

The guy in the orange apron at 2:18 seemed to know what he was doing. Did you see how he cut the pepper open, removed the stem AND removed the seeds and pith in ONE FELL SWOOP?? That takes knife skills. And then he followed it up with some precise Julienne slices.
Contrast that with the lugnut who shoved a Knife Sharpener into the pepper

pull off the stem
cut a line from top to bottom along one of the seams
then do the same with a seam on the other side
pull the pepper apart
pull out the seeds
slice.

But thats literally how you do it. You dont want the seeds because they dont taste good, hence why he didnt use it. You eat only the part he used.
He threw away very little of the sweeter red part 😂 but it’s a technique nothing more. It’s not a right or wrong way. You can choose to keep the tiny bits of leftover parts as I do when I cook at home( depending recipe ) but at work it’s all for speed.
Not really, most of what he threw away is seed. The only real part he wasted was the top, which I guess as the other guy says is optional :P (I do prefer to try to keep the bit of flesh on the top, but that's just me)

@@PandaA1257 its a honing steel because it re aligns the blade. when the knife makes contact with a surface or item it bends the ridge of the blade off so it will go to one side. thats why when you try to cut something you see it slide to the side because thats where the angle of the ridge is facing

This is the first one that I've disagreed with the chef on. I cut the top off, including the seed core and then slice some off the bottom. Then I take the pepper, cut a slit into the side, which allows you to flatten the whole pepper out into a "sheet" from there you just chop the entire sheet into strips. You can also remove the crown from the core and the bottom part if you want and chop those up, so you get more yield from your pepper. As for the pith, I don't think I've ever removed that, but I guess you could if you really felt you needed to...

you take out the white layer off by going a circular thin cut inside the pepper. boxing pepper:
cut bottom, cut top at the right position the thingie falls by itself. then stand the pepper, do a vertical cut, "roll it out" do the thin layer, slice
I just cut around the circle and then i just go around and just pull it out and then you can cut it

He was just cutting around the center. He didn't waste much because of the majority of what was left was the center. Just a more efficient and quick way

@@gabewilliams380 Its a method taught in culinary school. Its totally okay to use the top and bottom, but for presentation purposes, they are trimmed off to make the cuts more uniform.
That's the difference between time efficiency and food efficiency.
If you go for speed of preparation you tend to loose a bit of the food.
If you go for saving most of the food, you tend to loose quite a bit of time.
You choose what is more important to you.
That is the cheffy way. But even restaurant kitchens might get some use out of those bits if, for example, they make their own vegetable stock or something.

How Awkward will it be to call a chef and say:

Ashu the chef does a lot in one take, it’s not like they’ll hire him to cut a single pepper. He does a bunch of these videos at once
Look at the waste the chef has compared to the regular people. Pretty sure you can get more out of the pepper than the way he does it. I know I do... It might not the the fastest/easiest way, but at least I use pretty much all of the pepper (ofcourse no seeds, stem and white parts).

Chef didn't do it right. I'm sure his way is fastest when in a rush hour for a restaurant but definitely not efficient. Do what 2:18 does and wash out seeds/cut left over white parts
Don't worry about it, everyone starts somewhere. And people will give conflicting answers and argue about the tiniest of details when it comes to cooking, so just practice and do whatever works for you.

Capsicum is the family name of the plants the "berries" (technically peppers are that) comes from. Bell peppers are called sweet peppers in UK and pimiento in mexico where they originate from.

The so called pro is wasting so much of the pepper you can tell he doesn't own a restaurant of his own. Product waste(shrinkage) is the third most common reason that so many new restaurants go bankrupt. First being lack of planning/budgeting for your first year of payroll in your original business plan followed by having expensive products/ingredients on the menu when a less expensive menu with cheaper products/ingredients will do the same job. Bringing us back to waste as number three reason.

josephine barren Cleary you don't eat them much if you think there is no core. I eat these like 4 times a week, and there is definitely a core, it's the white bits that taste very bitter and are not good to eat. He didn't waste anything, he got the best tasting part of it, the rest is bitter.
