Couldn’t you just mark with a tape 2425 to achieve centre of post??

I have heard that from some that using concrete is better than quick set concrete, what is your view on this?

Quickset is ok for steel but not aluminum as it will corrode the posts faster. It states on the fence instructions not to use it. Use general purpose instead.
