How To Make Sesame Balls by Bao Bei 芝麻球

  • The Perfect Sesame Balls! (Recipe Below)
    One of my favorite Desserts that are found in almost all Chinese Buffets and Dim Sum. These are crispy, chewy, and filled with an explosion of flavor that you can adjust depending on your choice of filling. A bit difficult but so worth it, and taste even better than restaurant quality. Let's get to it.
    Recipe (12 Sesame Balls)
    - Glutinous Rice Flour (300 grams)
    - Warm Water (220 grams + extra for shaping)
    - Sugar (50 grams)
    - Flavored Paste (240 grams, 20 each)
    - Sesame Seeds (as needed)
    - Oil (enough to deep fry)
    1. Cut paste of choice into even size and weight, they should each weigh 18-20 grams). Dust a plate and paste with flour and form each piece into a ball. Store these in the freezer until ready to use. This will make it much easier to handle later on.
    2. Dissolve sugar in a cup with 220 grams of warm water to use for the dough. Pour our water mixture, in increments, into a bowl with Glutinous Rice Flour. Be sure to stir at the same time and evenly distribute water all around.
    3. Stir, the knead for about 5 minutes, not to rough as Glutinous Rice Flour is very delicate and will crumble. Cover for a few minutes. Now use a knife or your hands to make 12 dough pieces around 45-50 grams each. Work with one piece at a time, and *be sure the rest of the pieces are covered to avoid drying out.*
    4. Get your Sesame Ball station ready with a bowl of water, sesame seeds and our pastes from out the freezer. Firmly rub our dough into a circle to get rid of any cracks and smooth it out. *If you begin to feel any cracks or dryness during this step and the next step, use a bit of water and then continue.*
    5. Create a pocket in the dough with your thumb, with an even thickness all around. Drop in the filling and with your thumb and index finger, pinch the top in a round formation until it's sealed off. Pinch it, and then give it a final rub to smooth it and shape it into a ball. (Again if you see cracks just use a bit of water while rolling)
    6. Roll the ball in the sesame seeds to get an even coating all around. Repeat this step until all balls are finished.
    7. Fry the sesame balls on a low heat for 15 minutes. You should see gentle and soft bubbles to ensure your heat level is low enough, but still cooking. The balls will begin floating to the top, move them around often to ensure all sides are being cooked evenly. Continue until golden-brown color is reached and balls are fully cooked. (DO NOT FRY ON A HIGH HEAT THEY WILL EXPLODE)

    At the Dim Sim restaurants, the sesame balls you get most likely will be cold, the best way to enjoy it is when it’s just cool enough for you to bite into it!! Making it at home is most ideal!

    I buy my filling at any local asian grocery store near me as they are usually easier to come by than the actual ingredients needed to make them all! Also much simpler just to buy, happy cooking!
