That has to be the most informative apple tree video I've seen. I like the fact that you don't even pretend that its easy to do. There's a lot of other videos on TH-cam that suggest otherwise.

This guy looks like Bill from Left 4 Dead series, but if he never went to Vietnam, and instead became a gardener in Britain somewhere.... I can imagine this guy killing zombies with a Machete. He'd probably survive. 10/10 video.
You mention that you demonstrat notching in your training video. I don't see a espalier traing video on this site I have a lot f trees but the buds produce 10 degree strong branches from the vertical Is too stiff to bend over. Do you have a notching technique that can get the cordon oming ou of the central leader at about a right angle
Use weights to bend the lateral/horizontal branches when they're still relatively young and pliable. Some people hang bottles filled with water on them. Others use twine to tie them up and pull them closer to the horizontal plane. If both those methods fail, try wiring, like in bonsai.
