That has to be the most informative apple tree video I've seen. I like the fact that you don't even pretend that its easy to do. There's a lot of other videos on TH-cam that suggest otherwise.
What kind of benefit the tree can get from being extremely toxic that kill anything?

It benefits because nothing fucks with it
The herbivores that eat the fruit die, so the remaining trees can thrive. It's the same reason trees have berries that are poisonous to mammals, but not birds. They're able to pollinate via the excretion through birds, because they dont eat all the fruit - whereas mammals are likely to eat all of the fruit before moving into the next. Birds can also travel vast distances before excreting the seed, this allowing the trees offspring to diversify to new environments where certain predators may not be. Birds further the expanse of where the offspring can exist expenonentially further than what humans or other mammals can travel distance wise in the same amount of time/generation/spread/concentration of variation of environment in which the seeds are expelled.

You mention that you demonstrat notching in your training video. I don't see a espalier traing video on this site I have a lot f trees but the buds produce 10 degree strong branches from the vertical Is too stiff to bend over. Do you have a notching technique that can get the cordon oming ou of the central leader at about a right angle
Use weights to bend the lateral/horizontal branches when they're still relatively young and pliable. Some people hang bottles filled with water on them. Others use twine to tie them up and pull them closer to the horizontal plane. If both those methods fail, try wiring, like in bonsai.
Whoops.........I got Brexit wrong.............I thought it meant the British had to leave the U.K.............so I've moved to way out West Cork! No Tesco's down here so I'm gonna have to plant an orchard of heritage Irish apple trees! P.s a lot of Irish over here!

Over the last few years I've bought a number of fruit trees from Ian Sturrock ( well a mini orchard in my front garden to be precise.....) . This great guy produces the best heritage trees you can buy. Please give Ian the support he deserves. There's nothing like owning your own min garden of Eden, and you avoid all the carcinogenic rubbish the big supermarkets have the audacity to charge us for.
