Saucy Pancit Canton with U.S. Pork Lechon Kawali | Chefmom Rosebud

    Pancit Lechon Kawali

    Ingredients:
    2 kls boneless U.S. Pork Belly
    3 liters water
    1 head crushed garlic
    1 1/2 Tbsp salt
    1 Tbsp whole peppercorn
    1 tsp black pepper powder
    3 pcs bay leaves
    1 pc knorr cube pork
    Rock salt - for liempo skin.
    For the Pancit:
    500 grams Pancit Canton
    4 pcs shiitake mushroom, sliced
    1 large carrot, julienned
    3 stalks spring onions, sliced
    3 cups prawn or chicken broth
    1 tbsp cornstarch
    60 ml soy sauce
    3 tbsp oyster sauce
    3 tbsp hoisin sauce
    1 red onion, thinly sliced
    6 cloves garlic, minced
    2 tbsp cooking oil
    fish sauce, to taste
    freshly ground black pepper
    calamansi
    Procedure:
    1. Pat pork belly dry. Heat water. Add the pork belly. Add in all ingredients for flavor. Let boil for 45 minutes to 1 hr.
    2. Drain on colander. Let air dry for 1 hour while adding some rock salt on the skin.
    3. Place inside the chiller or ref for at least an hour before frying.
    4. Take out of the chiller. Pat dry to make sure there’s no more moisture.
    5. Fry on medium heat till cooked. Set aside.


    6. Prepare noodles by soaking it in boiling water for a minute. Drain, rinse with cold running water then set aside.
    7. Place wok in a high heat, add oil, then sauté the shallots and garlic, add the carrots and spring onions stir fry for a minute.
    8. Mix the cornstarch, broth, soy sauce, oyster sauce and hoisin sauce, pour it into the wok. Bring to a boil and let the sauce thicken.
    9. Add the noodles, let the noodles absorb the liquid and cook for 2 minutes in high heat.
    10. Add the lechon kawali, then season with freshly ground black pepper and fish sauce.
    11. Place in a serving platter together with calamansi slices.
