But in older days when families were big and the life was very different , process of making vinegar this way was normal and acceptable. Nowdays things are different. But this golden knowledge has to be preserved forever. I truly hope we will all come in better terms with nature and life itself. God bless us all.

所用材料虽只 5 样，可真好多重多重的操作与操作，好漫长光阴的期待与期待啊。。 ！！
真很不简单的呢。。很佩服古人从中所累积宝贵的经验和实践呀 ！！

看其制作过程，5 样材料可分配成 3 大工序处理的呢 ：
1. 制曲 2. 酒精发酵 3. 醋酸发酵
🌟☘🍁🍁🍁☘🌟
（1）大麦，豌豆 分别磨粉拌均匀 ，加温水拌曲 ，木框内踩实成大砖形曲块，铺草发酵 25 - 30 天，取曲块打碎，加温水润曲翻拌备用。
（ 赤着双脚，轻松踩踏制曲块时的模样呀，真好有趣有趣的呢 。。！！）
🌟🌈🎶🎊🌹💞💞🌹🎊🎶🌈🌟
（2）高粱磨粉，加温水润料 8 小时以上， 蒸料至上气，停火闷半小时，加热水搅拌均匀，闷至熟透后，将料捞出置筲箕上，与润好的大曲料搅拌均匀，落入缸中，加凉开水进行酒精发酵 3 天，以泥封口发酵半月。
（ 看树梢上那只好可爱的猫咪咪也很好奇地东张西望呀 。。！！）

（3）发酵好的酒精加入麦麸，谷糠，捞出置于大筲箕上拌匀，落缸中进行醋酸发酵，成熟好的醋醅缸中压实，加上食盐，密封陈酿半月，之后熏制 7 天，每天翻料。熏好醋料落入大缸中，加水淋醋反复至醋液清澈，放置一旁陈酿，冬捞冰，夏伏晒一年以上。。
（ 看上竹林小山丘挑着两箩重重陈酿好的醋醅进行熏制时 🌟🌈🌹❤❤🌹🌈🌟，那只可爱的小狗狗都跟着望着您工作呢 。。！！）

经长年岁月后，取出部份陈醋加热灭菌，入酒坛中储存，其余的继续陈酿陈酿。。

终于呀，期待已久的家乡酿 “ 陈醋 ” 出来了呢 ！！

入口可是份外的醇厚香浓，温馨暖暖在心头啦 。。！！
