I don't know what google is doing, this is a tutorial for making regular signs. Editable signs are a lot more complicated involving textboxes and GUI's. I don't know if I can make a tutorial on that, but maybe in the future!

You change the text of the sign in the properties of the textlabel. If you can't see your text, you probably didn't format the textlabel correctly.
