My boyfriend makes this soup with chicken and throws in a bay leaf. It comes out pretty good. I also like it without the chicken -just pasta with some simple quesadillas on corn tortillas to accompany it.
I love soup recipes like this. You really can't mess it up as that combination of ingredients is going to taste good any way you put them together. Yum!

Queso fresco is my favorite, but it was pricier than the free cheese we had. Honestly looking back at childhood, the neighborhood grocery store had very few Mexican ingredients. The local Mexican grocery store was far from us. When we got to go, it was like Disney world for us...lol!
When I was a kid I loved it this way. Now I add minced garlic, garlic powder, chopped dried onion, cumin, salt pepper, bay leaves, oregano and chili flakes along with tonys. I can't stop adding stuff.

My Grandmother used to make this soup all the time but she used coditos and sometimes break spaghetti into three. Where I live here in California( Central Valley) it was hard to find fideo in 70's. She'd fry the coditos and add tomato suace and water then add water and bouilion and spices. Me and my sister make it now and nieces love it.
I made this tonight for dinner, I didn't have a star shaped pasta so I used 2 lb of elbow macaroni. Browning the elbow macaroni like you (I added smoked paprika), I had 8 drumsticks in the refrigerator from 2 nights ago leftover, I add a pound of smoked sausage link leftover from yesterday's sausage n potato meal, can of rotel ( I didn't have any tomatoes or tomatoe sauce), two gallons gone in about 30 mins.... Wow, thank you. Ps: sorry I didn't follow your receipt. You made it look soooo good, I had to try before shopping day. Thanks!

I made this last night for dinner. I made it with the letter pasta. It was delicious. I must say, I've never seen it eaten with mozzarella cheese. I actually had the mozzarella string cheese at home and decided to add it to the sopa and OMG🤯. It's amazing.
I still make it but instead of adding tomatoes or tomato sauce, I know use Knorr Tomato Seasoning. That takes care of all my seasoning, to include salt and tomato color. I only add onions and sometimes add pieces of chicken at times.
Very simple. I just developed a recipe for Italian meatball soup using pasta sauce, pizza sauce and beef and chicken broth. I love it. I started with a mixture of ground beef and pork in meatballs, but decided I wanted meatballs made with Italian sausage, a mix of mild and hot sausage, 4 to 1. I just got tired of creamed soups all the time. I did add curly endive and half box plus (7 oz) of cooked pasta rings. Yummy.
I made this not exactly but similar I added me at balls ...plant based ones and it was delicious thank you ..I had never made this but wanted to make my baby some yummy soup

My youngest boys just said Mom can you make some stars after school. I was on a coffee break folding laundry and your video popped up. Brings back so many memories especially that government cheese! LOL Well now I know what were having for dinner tonight. And best of all it's cold and windy here in California.
My all time favorite! I make mine the same but I add onion and garlic 🧄. I dice Muchrooms in it if I have them available & I serve it with Parmesan cheese. No chicken though.

Love it. I toast my rice before I cook it. That's a great idea to toast the noodle. WOW. I don't like powdered bouillon.. Better Than Bouillon or my own canned broth is what I like. But the whole soup seems delicious. We had the same cheese and as a young adult too. Thank You for such a good video. :D
Omg when you said government cheese. We call it commodity cheese on the reservation I’m from. I miss it so much 😢 the best cheese ever. My grandma still always gets it 😂 but I live SO far away

@Simply Mama...I'm much older than you but I remember they used to give the elderly people in our village the 'free gov. cheese' and they always gave my grandfather much more than he could use so he'd always take a big block of it to our house, they would also give him powdered milk which was pretty awful but my mother would add it to a half gallon of fresh milk to make a full gallon and it was pretty good that way..... I hadn't thought about that cheese in 50yrs. which is about as long as it was since I've had it...
I don't have stars but I'll use some other pasta I have. But I know the stars make it taste better. A young me wouldn't accept any other shape but grown me is broke and sick so I need sopita.
Eleni Stamatakis same thing happened to me as well. But then one day I tried it with the “cons•mate” tomatoe bouillon, the powder one not the cube and it was delicious! It depends on the brand I think.
