    This may sound a bit harsh but the only thing that really works in “getting” someone to eat healthily is letting them get into serious health trouble, some people have to nearly die before they’ll try, then explain the pleasure trap and how in a few weeks they’ll enjoy vegetables, potatoes and beans. That’s what I’ve seen. I don’t ever bring it up to people because I got tired of hearing people say, “I’d rather just die.” The world’s in a tough spot.

      The slim and fit people who ate this type of healthy vegan diet never started it because of any serious health trouble but eventually in time it wrecked their health such as Steve Jobs, Andy Kaufman, Robin Gibb, Linda McCartney, Brad Delp, Susan M. Levin RD, Gilda Radner, Dr. Henry S.       Nope not harsh just the unfortunate reality. I honestly can resonate with you. It is just painful to be honest. I just let people be. I just go about my vegan diet and lifestyle and they get curious and now 5 of my co-workers are 100% plant based and 2 of them are 100% vegan aka made the connection with animal cruelty. Yep.

      People will want that and will want to know how, not all but some. When we can be examples it slowly spreads just by being a good example…

    I listen to two types of podcasts: video games and health podcasts. Never did I dream I’d ever get to listen to a crossover podcast between those two topics! I got to simultaneously veg out and nerd out; it was the best!
    Chuck, the system you were thinking about 18 mins into the video is the Nintendo Virtual Boy, and the game is Mario’s Tennis. It holds up better in your memory than reality, unfortunately. Virtual Boy graphics are hard on the eyes and some people get headaches from playing it. I only play on mine in short bursts, 20ish minutes or so, to avoid the eye strain.

    Thanks for introducing me to Catherine! I’ve been vegan 3.5 years. I’m embarrassed to say I’d not seen any of her stuff, but this prompted me to go look. Looks great! I’ve just ordered her cookbook and it will be here today ❤

    What a delightful, wise young lady. I love retro games too! Tried the GBA version of Mario Cart? I love that one! Plays great on an emulator on big screen. I used to be a games dev. We were one of the first companies to get our hands on a PS1 Dev kit and the N64 dev kit a year before the consoles came out.

    I have Rheumatoid Arthritis. I have quit dairy and coffee but I’m still in pain. Quitting meat is tough but I have no strength or stamina with this disease anyway, I might as well go vegan.

      good luck; I found weight loss and regular stretching (gently) helped plus taking curcumin (from a turmeric and black pepper capsule) and also black elderberry gave some relief and eventually got me off nsai drugs. wfpb diet and slight daily calorie deficit helped too. Just my anecdote not sure where the science is at.

      Check out doctor furhman, hes got good info on a nutritional sound diet. Lots of studies show a reduction in RA on a plant based diet

      @@polibm6510 did it help? I don’t think I’ll go carnivore. I’ve had bad guts (undiagnosed IBS) for years now. Fasting helped but I think I have “leaky gut” or something. Anyway I want to get my gut healthy to help my RA. Cheers

    If someone asks if I am vegan (because they know I am eating no animal products including dairy, also no added oil) I say "No, because Doritos, Oreos, and soda pop can all be Vegan." I am whole-food plant-based and I eat virtually no highly processed foods. As a plus I have been steadily dropping weight (down 40 pounds now, 5'5" and 133 lbs) and I stuff myself and don't count calories. 😊

      Conversely, I tell them that I am indeed vegan for the animals, that I can occasionally choose to pay the price by eating processed vegan foods, but I am not willing to have an animal pay the ultimate price for my pleasure.

      @@mareezy In about March I started counting calories, aiming for 1,000 - 1,200 per day. To fill up that entails a lot of healthy food, no junk. The first thing that helped me turn the corner was discovering The Glucose Goddess on TH-cam. She is a biochemist and has compiled all the science that shows how to minimize glucose spikes into 10 hacks. They work great and I had no more cravings and was able to resist eating in the evenings. (And perhaps coincidentally I don’t have insomnia any more.) Then I discovered Time Restricted Eating. The science shows that your body needs a rest from always being inundated with food. I watch tons of channels like “Zoe, Science and Nutrition,” “The Physician’s Committee,” Dr. Mark Hyman, Dr. Will Bulsiewicz, The Esselstyns. Controlling inflammation, enhancing the gut microbiome, etc. motivates me now,
      Then in September I had bloodwork done and my cholesterol had not improved like I thought it would have after losing 30 pounds. I am against going on a statin. Instead, I am “going to the mattresses” and subsequently have eliminated all animal products including eggs, all dairy, all added fats (a la Dr. Esselstyn’s heart-healthy plan. Very extreme.) But I am doing it for only four months and then I will see how my cholesterol is. Then I will methodically add in one thing at a time for four-month periods and draw blood. Since this big change in September I am eating tons, am not counting calories, and have been dropping about another pound a week. My scale now says 132 lbs.

    ?? Have to add that in my own experience oil has prevented me from weight loss, so i am also coming from experience and direct family members who have heart disease and had strokes increasing my risk… ❤❤❤❤

      Oil is fat, which contains more calories per gram than protein or carbohydrates. A tablespoon of oil won’t satisfy your hunger like a big bowl of broccoli would.

    No one wants to take accountability for eating animals or wearing them. Thats frustrating. Or thinking u get only protein from animal tissue. Protein comes from plants. Also when people say they love animals yet they eat them! That drives me crazy.

    ??? Why as a dietician do most of your recipes contain oil? Especially with the research proving this as unsafe especially for those with stroke and heart diseas? Not an angry listener just a curious starch solution, esselstyn follower. Thanks❤

      On the contrary, there isn’t prove for oil being problematic, unless you consume too much of it.

      There’s tons of proof (we call it evidence) for oil being extremely problematic. Listen to Dr Peter Rogers on the oil - he goes pretty deep into the biochemistry and why it becomes problematic. The mechanics of our very-complex machines is what matters. Cause and effect. It creates pimples inside our arteries. That’s what atherosclerosis is. That’s what creates the blood clot. Oil settles into the arteries then white blood cells eat it and explode - creating a volcano structure from inside the arterial wall, protruding through the artery wall, impairing blood flow.
      People who support oil are either ignorant of the biomechanics taking place (it’s not taught anywhere - you have to dig into the research papers and figure it all out), paid by oil companies to promote oil, or afraid people won’t buy their books if they advise cooking without it. Also, cooking is mostly a waste of time. The healthiest way to eat is whole natural plant foods with minimal prepping and mixing. You don’t sell cook books by telling people to heat up vegetables, potatoes and beans. Complexity is where the dollar’s at. Very difficult to live a simple life in an ever-increasing world of complexity.

    Vegan diet no doubt is one of the most humane and healthies diet you can adopt, just keep in mind you need vitamin supplementation like b-12, iron, etc. because you can develop anemia and low platelet count. Also, have blood work done twice a year, just for preventative measures.

      Yeah, thats simply not true. That info comes from industry funded science..
      Try fermented rice, nori, duckweed, mushrooms, fermented grains veggies and fruits.

      It can be, yes you are right it's the most humane but not necessarily the healthiest, as Oreos, fried potato chips, white bread, high processed foods, etc. are the most unhealthy vegan food sources. I hope you mean Whole Plant Foods, then of course you are right, like Vegetables, Fruits, Leafy Greens, Legumes, Nuts and Seeds. Yes B12 is an absolute must, but consider as well Omega 3 and Iodine if you are not eating Algae regularly and Vitamin D, if you are staying mostly indoors or are using Sun protection. Iron only if a deficiency is clinically proven, better to eat Iron rich foods like Pumpkin-, Sesame seeds, Tahini, beans and other seeds combined with a high Vitamin C source like Bell Peppers, Kiwi fruit, etc. and avoid Black, Green White, Chamomile and Mint Teas as well as Coffee within 2 hours of eating high containing Iron and Vitamin C rich foods as those teas and coffee reduce Iron absorption. Yes Blood work is a very good idea but not only for Vegans even Omnivores can be deficient of B12, Omega 3, Iodine and Vitamin D, especially folks over the age of 65, as absorption of these nutrients and the capacity for Vitamin D production reduces with age.

      Careful with iron supplements. Too much iron is bad. Centrum Silver multi vitamins for men have removed all iron because it would cause us more harm than good.
      My breakfast of oatmeal, chia seeds, flax seeds, hemp protein powder, wheat germ and berries contains more than 50% of the recommended daily intake for iron.

    I really like Chuck and admire his weight loss. Only 2 to 4% of the population is Vegan. Why would anyone intentionally become Vegan?

    I was vegan long ago. I was also a sanctimonious annoying person always making people feel guilty if they even looked at a hamburger. My weight plummeted while I was pregnant and to this day when I look at the pictures, I cringe at my skeletal face. Thankfully, I realized that my kids did better with a little meat and dairy in their diet. Being vegan has its good aspects, but so does being an omnivore who avoids overly processed foods. To be sure, I had my fill of overly processed garbage vegan food back then. God, the memories of TVP. Yikes!

      @@paulcohen6727 I had the same experience, always sick, now almost never, if I am sick then symptoms are mostly mild with a very short duration, but I also supplement with Vitamin D now.

      TVP mince is a staple now, just all in the prep/marinade as with tofu (which is best crispy for me!!)
