I have a garden and at the end of the season I use the tough stocks from my herbs to make a very flavorful stock. It's loaded with nutrients and flavor. So, NEVER throw old woody stocks away.

Just made the pesto from carrot tops. Didn't have pumpkin seeds or lemon juice... So I roasted some sunflower seeds in a hot pan and added some lime juice to the food processor. Also added aome black pepper and half of a (small) red onion. Kept the garlic clove (obviously, because... Garlic!) and olive oil. Wow. This is a keeper! Thank you for the tip! ✌️💚

I collect my scraps in a gallon sized zip lock bag and when it’s full I dump it into my crockpot with water and let it go. I don’t season preferring to keep it plain lest it conflict with a recipe. But I WILL start adding bay leaf! I can’t even guess how much money I’ve saved by not buying veggie broth and I’ve cut back on sodium too. I also use it to sauté instead of oil as I’m trying to gradually become oil free. I’m excited about the ‘stem slaw’ as well and I will definitely try the syrup. Now to try the composting. I have no idea how to begin! Maybe I can find out on TH-cam! You are simply glowing with health and happiness! Peace and blessings. ✌🏽

As for starting to compost, I would recommend looking to see if there is a local community garden that you can drop your food scraps off too. That's what we did when we lived in NYC ☺️ And if you have a backyard you can easily do it yourself. We use a backyard composting bin. Add food scraps + brown waste (like cardboard, dead leaves, or mulch), and let it do it's thing. You'll have to stir it before you add new waste, but that's pretty easy. Good luck!

I literally used fruit scraps for my Christmas presents this year. They were so well received that they suggested that I sell them. I used orange peels to make homemade chocolate orange. Candied them then dipped them in chocolate. Only downsides were the insane amounts of sugar I went through and the 2 weeks I couldn't use my counters since it took forever for me to dry them all (very little counterspace)

Great tips! You could also turn those boiled apple skins into candied peels by encrusting them with sugar & letting them dry on a cake rack for a couple of hours. Then you could use them as pastry decor or oatmeal toppings.
I know the oil brand is part of the point, yet, if you can't/don't do oil in your pesto, some veggie broth and or miso, is very tasty, too. I add pine nuts with pumpkin seeds.

I eat broccoli stems raw, just skin the outside and the inside is delicious crunchiness! Try it! I actually prefer it to the broccoli head! (I know im weird) I deliberately buy the biggest broccoli stem I can find with the smallest head lol,

Also my local supermarket often reduces the price on those carrots with stems and I don't buy them because I think I will not be able to use it up but now I can make pesto so thank you

Fit the Vergiss broth i save all Kind of Veggie ends in the Freezers. Not cucumber, kale, eggplant, zucchini. I cook it longer. If you have a Plage to make fürs cook it on the fire, like i do in the outside for 1-3 hour. If you fill it hot in sterilized glasses it stay fresh for years outside the fridge
Some good ideas here! Also, weird for me, that composting isn't normal everywhere. Here, the city dweller's food scraps are being collected separately in our garbage rooms. Then the food scraps are used to make biofuel, that the public buses runs on.

Food scraps enhance the soil as long as those scraps are raw. Nothing ever gets thrown away. Food scraps just enhance the soil, even when trashed.🙂👍

Haha.. that leftover "compost" usually becomes a seasoning paste (after moderate blending) that we use throughout the week for the base of our meals

We can put food scraps in our green waste bins along with weeds and grass clippings. It’s strongly encouraged by our trash pick up service.
