This really just shows that even an inexperienced warrior would have an incredible edge over any single-weapon wielding enemy, as lightsabers require little strength to cut through another being and as such your off hand blade is always able to avoid the enemy's single blade
lore suggests lightsabers are very heavy and have a rotation effect to it, so they're hard to stop. That's why dooku didn't like his apprentice wielding dual blades.
The problem with dual wielding is that even if lightsabers have no weight, you still need to control the opponent's weapon. Holding a lightsaber with two hands you have more leverage that someone holding one in one hand, moreso if your weapon has no mass because it has no inertia to resist being moved or deflected from its course. Leverage is an even worse issue when using long blades one handed so dual wielding you should be using shorter blades which then creates a reach disadvantage. An inexperienced warrior is even worse off, try to block a two handed strike with one hand improperly and the force of the blow will push their blade aside and continue to cut into them or open up the space to strike.

The thing I like about this stuff is that it looks just like actual sword fighting techniques, at least most of the time. I like it even more because this is coming from fiction
You know this fighting style could be feasible and very effective. Unlike real sabers which require significant kinetic force using the arm in precision so that only the sharp edge of the saber could hit. For Lightsabers, though they don't need that kind of surgical force since one tough or graze from that superheated stick off doom and it could melt you, giving you serious wounds. Seems like a good counter is to draw them into using a two-plane cut as you bring your blade up into a hanging guard, but also intentionally step back just out of range and lunge forward with a long thrust as soon as the blades are past your position. If they anticipate it, they'll be forced to spin out of the way, leaving them open for a follow-up as you step forward and slash up towards them before they can bring their guard up; or to sidestep but over extend their swings and break the flow of their attacks. (Irl they could also step back out of range and then step past your thrust to slash your wrists, but Jedi and Sith can use the force to extend a lunge further forward). They could also fall backwards into a roll, but they'd still be risking a touch to the legs if you turn your sidestep and uppercut from the spin response into a second forward lunge and uppercut. Bearing in mind that this requires the correct foot work to work (if they step forwards with the other foot they can sidestep the lunge with a pivot and remove your wrists/head; and if you guard with the wrong foot you'll be unable to follow up and will get slashed across the face by their return spin), so they can refuse to let you have the correct opening if they know what you're doing.
